Malai Cake

Ingredients:

Prepare Milk Malai Syrup:

  • Doodh (Milk) 3 Cups
  • Elaichi powder (Cardamom powder) 1 tsp
  • Condensed milk ¾ Cup
  • Olper’s dairy cream 200ml (room temperature)

Prepare Cake:

  • Anday (Eggs) 5
  • Bareek cheeni (Caster sugar) 3/4 Cup or to taste
  • Vanilla essence 2 tsp
  • Baking powder 2 tsp
  • Cooking oil ½ Cup
  • Soji (Semolina) 3 tbs
  • Maida (All-purpose flour) sifted 1 Cup
  • Pista (Pistachios) sliced
  • Badam (Almonds) sliced

Directions:

Prepare Milk Malai Syrup:

In a wok,add milk & bring it to boil.

Add cardamom powder and condensed milk,mix well & cook on medium flame until it reduces to half quantity and keep mixing in between.

On low flame,add olper’s cream,whisk well and cook until it slightly thickens (approx. 2-3 minutes) & let it cool.

Prepare Cake:

In bowl,add eggs,caster sugar and beat well (approx. 2-3 minutes).

Add vanilla essence,baking powder,cooking oil and beat for 2 minutes.

Add semolina,all-purpose flour and beat again.

Grease baking dish with cooking oil and pour prepared batter.

Bake in preheated oven at 170 C for 30-35 minutes.

Take out cake from oven & let it cool completely.

Using a wooden skewer,poke holes all over the top of the cake.

Slowly pour prepared milk malai syrup over the top of the cake,filling holes.

Refrigerate until chilled.

Garnish with pistachios,almonds & serve!
