Ingredients:
Prepare Makhani Choley:
-Pyaz (Onion) 3 medium
-Tamatar (Tomatoes) 2 large
-Cooking oil 2-3 tbs
-Makhan (Butter) 3-4 tbs
-Zeera (Cumin seeds) ½ tsp
-Sukhi lal mirch (Dried red chillies) 3-4
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Namak (Salt) 1 tsp or to taste
-Zeera powder (Cumin powder) 1 tsp
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Dhania powder (Coriander powder) 1 tsp
-Haldi powder (Turmeric powder) ½ tsp
-Chicken powder ½ tbs
-Kali mirch powder (Black pepper powder) ½ tsp
-Choley (Chickpeas) boiled 2 Cups
-Water 2 Cups
-Cream 4-5 tbs
-Garam masala powder ¼ tsp
-Kasuri meethi (Dried fenugreek leaves) 1 tsp
-Hara dhania (Fresh coriander) chopped handful
-Hari mirch (Green chillies) sliced 2-3
-Makhan (Butter) 1 tbs
-Hara dhania (Fresh coriander) chopped
-Makhan (Butter)
Prepare Bhatura:
-Maida (All-purpose flour) sifted 2 & ½ Cups
-Sooji (Semolina) ½ Cup
-Namak (Salt) ½ tbs or to taste
-Sugar powdered 1 & ½ tbs
-Baking soda ¼ tsp
-Ghee (Clarified butter) 2-3 tbs
-Dahi (Yogurt) 3 tbs
-Water ¾ Cup or as required
-Cooking oil for frying
Directions:
Prepare Makhni Chanay:
-Grate onion & tomatoes with the help of grater & set aside.
-In a wok,add cooking oil,butter & let it melt.
-Add cumin seeds,dried red chillies & mix well.
-Add grated onion & tomatoes,mix well & cook on medium flamer for 3-4 minutes.
-Add ginger garlic paste & mix well.
-Add salt,cumin powder,red chilli powder,coriander powder,turmeric powder,chicken powder,black pepper powder,mix well & cook for 2 minutes.
-Add boiled chickpeas & mix well.
-Add water,mix well & bring it to boil,cover & cook on medium flame for 6-8 minutes.
-Turn off the flame,add cream & mix well.
-Turn on the flame,add garam masala powder,dried fenugreek leaves,fresh coriander,green chillies, butter,cover & simmer on low flame for 2 minutes.
-Garnish with fresh coriander,butter & serve!
Prepare Bhaturay:
-In a bowl,add all-purpose flour,semolina,salt sugar,baking soda & mix well.
-Add clarified butter,yogurt & mix well until it crumbles.
-Gradually add water & knead until dough is formed,cover & let it rest for 30 minutes.
-Knead & stretch dough again for 2-3 minutes.
-Grease hand with oil,take a small dough (50g),make a ball,grease with cooking oil & press gently and roll out with the help of rolling pin (makes 13-14).
-In a wok,heat cooking oil (160-170C) & deep fry bhatura on medium flame until it puffs up & golden.
-Serve with bhatura with makhni chanay,pickle & onion.

-Karahi mein cooking oil aur makhan dal ker melt ker lein.
-Zeera aur sukhi lal mirch dal ker ache tarhan mix karein.
-Grated pyaz & tamatar dal ker ache tarhan mix karein aur darmiyani ancch per 3-4 minutes kliya paka lein.
-Adrak lehsan paste dal ker ache tarhan mix karein.
-Namak,zeera powder,lal mirch powder,dhania powder,haldi powder,chicken powder aur kali mirch powder dal ker ache tarhan ker lein aur 2 minute kliya paka lein.
-Choley dal ker ache tarhan mix ker lein.
-Pani dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur darmiyani ancch per 6-8 minutes kliya paka lein.
-Chulha bund karein aur cream dal ker ache tarhan mix ker lein.
-Chulha on karein,garam masala powder,kasuri meethi,hara dhania,hari mirchein aur makhand al ker dhak dein aur halki ancch per 2 minute kliya dum per rakh dein.
-Hara dhania aur makhan sa garnish ker ka serve karein!
Prepare Bhaturay:
-Bowl mein maida,sooji,namak,cheeni aur baking soda dal ker ache tarhan mix ker lein.
-Ghee aur dahi dal dein aur crumble ho janay tak ache tarhan mix ker lein.
-Thora thora ker ka pani shamil karein aur ghond ker dough tayyar ker lein aur dhak ker 30 minutes kliya rakh dein.
-Dough ko dubara 2-3 minutes kliya ghond ker stretch ker lein.
-Haath ko oil sa grease karein,chota dough lein (50g) aur ball bana lein,cooking oil sa grease karein aur gently press ker ka rolling pin ki madad sa bail lein (makes 13-14).
-Karahi mein cooking oil garam karein (160-170C) & bhatura ko darmiyani ancch per puffs up aur golden ho janay tak fry ker lein.
-Bhatura ko makhni chanay,achar aur pyaz ka saath serve karein.
