Ingredients:
- Hari mirch (Green chillies) 7-8
- Podina (Mint leaves) 1/4 Cup
- Hara dhania (Fresh coriander) 1/4 Cup
- Lemon juice 3-4 tbs
- Dahi (Yogurt) whisked 1 & ½ Cup
- Adrak lehsan paste (Ginger garlic paste) 3 tbs
- Namak (Salt) 1 tbs or to taste
- Zeera (Cumin seeds) roasted & crushed 1 tbs
- Lal mirch powder (Red chilli powder) 1 & ½ tbs or to taste
- Haldee powder (Turmeric powder) 1 tsp
- Saunf (Fennel seeds) crushed ½ tsp
- Garam masala powder ½ tbs
- Hari elaichi (Green cardamom) 7-8
- Sabut kali mirch (Black peppercorns) ½ tsp
- Darchini (Cinnamon sticks) 2-3
- Dhania powder (Coriander powder) 1 tbs
- Tez paat (Bay leaves) 3-4
- Pyaz (Onion) fried 1 Cup
- Chicken 1 kg
- Cooking oil ½ Cup
- Podina (Mint leaves) chopped 2-3 tbs
- Hara dhania (Fresh coriander) chopped 2-3 tbs
- Pyaz (Onion) fried 1-2 tbs
- Chawal (Rice) sella ½ kg (soaked & boiled with salt until 3/4th done)
- Ghee melted 2 tbs
- Water 2-3 tbs
- Zarda ka rang (Yellow food color) ½ tsp
Directions:
Prepare Make & Freeze Biryani Marinade:
In blender,add green chillies,mint leaves,fresh coriander,lemon juice,blend well & set aside.
In a bowl,add yogurt,ground paste,ginger garlic paste,salt,cumin seeds,red chili powder,turmeric powder,fennel seeds,garam masala powder,green cardamom,black peppercorns,cinnamon sticks, coriander seeds,bay leaves,fried onion and mix well.Biryani marinade is ready!
In prepared biryani marinade,add chicken and mix well.
Add cooking oil and mix well,cover & marinate for 1 hour.
Can be stored in freezer for up to 1 month (divide in two containers ½ kg in each box).
How to Use Frozen marinade to make quick Biryani:
Before cooking,take out from freezer,defrost marinated chicken in refrigerator for 6 hours/overnight or at kitchen counter for 2-3 hours.
In a pot,add defrosted chicken biryani marinade (½ kg),mint leaves,fresh coriander,fried onion,boiled rice and ghee.
In water,add yellow food color and mix well.
Now add dissolve food color,trun on the flame,place damp cloth over the pot,cover & steam cook on low flame for 30-35 minutes & serve!

Blender mein hari mirch,podina,hara dhania aur lemon juice dal ker ache tarhan blend ker dein & side per rakh dein.
Bowl mein dahi,ground paste,adrak lehsan paste,namak,zeera,lal mirch powder,haldee powder,saunf, garam masala powder,hari elaichi,sabut kali mirch,darchini,dhania powder,tez paat aur fried pyaz dal ker ache tarhan mix ker lein.Biryani marianade tayyar hai!
Tayyar biryani marinade mein chicken dal ker ache tarhan mix ker lein.
Cooking oil dal ker ache tarhan mix karein aur 1 hour kliya marinate ker lein.
1 month kliya freezer mein store ker saktay han (divide in two containers ½ kg in each box).
How to Use Frozen marinade to make quick Biryani:
Cooking kernay sa pehlay freezer sa nikal lein aur marinated chicken ko refrigerator mein 6 hours/overnight or kitchen counter per 2-3 hours kliya defrost ker lein.
Pot mein defrosted chicken biryani marinade (½ kg),podina,hara dhania,fried pyaz,boiled chawal aur ghee dal dein.
Pani mein zarda ka ramg dal ker ache tarhan mix ker lein.
Ab dissolve zarda ka rang dal ker chulha on karein aur pot per gheela kapra rakh dein aur dhak ker halki ancch per 30-35 minutes kliya steam cook ker lein & serve karein!
