Ingredients:
- Lauki (Bottle gourd) ½ kg
- Pyaz (Onion) chopped 2-3 tbs
- Hari mirch (Green chili) finely chopped 1-2
- Adrak lehsan (Ginger garlic) freshly grated ½ tbs
- Hara dhania (Fresh coriander) chopped 2 tbs
- Lal mirch powder (Red chili powder) 1 tsp or to taste
- Namak (Salt) ½ tsp or to taste
- Zeera powder (Cumin powder) ½ tsp
- Kali mirch powder (Black pepper powder) ½ tsp
- Besan (Gram flour) sifted ½ cup
- Cooking oil for frying
- Tamatar (Tomatoes) 2 medium
- Pani (Water) ¼ cup
- Haldee powder (Turmeric powder) ¼ tsp
- Kali mirch powder (Black pepper powder) ½ tsp
- Garam masala powder ½ tsp
- Lal mirch powder (Red chili powder) 1 tsp or to taste
- Dhania powder (Coriander powder) ½ tbs
- Zeera (Cumin seeds) roasted & crushed 1 tsp
- Cooking oil 3-4 tbs
- Pyaz (Onion) chopped ½ Cup
- Zeera (Cumin seeds) 1 tsp
- Tomato paste 1 tbs
- Namak (Salt) 1 tsp or to taste
- Hari mirch (Green chili) chopped 1
- Pani (Water) 1 cup or as required
- Hari mirch (Green chili) chopped
- Hara dhania (Fresh coriander) chopped
Directions:
Grate bottle gourd in a bowl and squeeze excess water completely with the help of the hands.
Add onions,green chili,freshly grated ginger garlic,fresh coriander,red chili powder,salt,cumin powder, black pepper powder,gram flour,mix until well combined and let it rest for 5 minutes.
Take a mixture and make balls of equal sizes.
In frying pan,heat cooking oil and fry balls on medium flame until golden brown & set aside.
In blender jar,add tomatoes and blend to make a tomato puree & set aside.
In a bowl,add water,turmeric powder,black pepper powder,garam masala powder,red chili powder, coriander powder,roasted & crushed cumin seeds and mix well to create spice mixture & set aside.
In pot,add cooking oil,onions and fry until light golden.
Add cumin seeds and mix well.
Now add prepared spice mixture and cook for 2-3 minutes.
Add tomato puree and mix well.
Add tomato paste,salt,mix well and cook until oil separates.
Add green chili and mix well.
Add water and bring to boil,add in the lauki koftay,cover partially and cook on low flame for 8-10 minutes.
Add green chili,fresh coriander & serve!

Directions:
Bowl mein lauki ko grater sa grate karein ar haath ki madad sa completely squeeze ker lein.
Pyaz,hari mirch,freshly grated adrak lehsan,hara dhania,lal mirch powder,namak,zeera powder,kali mirch powder aur besan dal ker ache tarhan mix ker lein aur 5 minutes kliya chor dein.
Mixture ki balls bana lein.
Frying pan mein cooking oil garam karein aur balls ki darmiyani ancch per golden brown hunay tak fry ker lein & side per rakh dein.
Blender jar mein tamatar dal dein aur blend ker ka puree tayyar ker lein & side per rakh dein.
Bowl mein pani,haldee powder,kali mirch powder,garam masala powder,lal mirch powder,dhania powder aur zeera roasted & crushed dal ker spice mixture tayyar ker lein & side per rakh dein.
Pot mein cooking oil aur pyaz dal dein aur light golden hunay tak fry ker lein.
Zeera dal ker mix karein.
Ab tayyar spice mixture dal ddein aur 2-3 minutes kliya paka lein.
Tamatar ki puree dal ker ache tarhan mix karein.
Tomato paste aur namak dal ker mix karein aur oil alag hunay tak paka lein.
Hari mirch dal ker ache tarhan mix ker lein.
Pani shamil karein aur ubal anay ka bad lauki koftay dal dein aur partially dhak ker halki ancch per 8-10 minutes kliya paka lein.
Hari mirch aur hara dhania dal ker serve karein.
