Ingredients:
Prepare Dough:
- Sunridge Safed chakki atta (White chakki flour) sifted 3 Cups
- Maida (All-purpose flour) sifted 1 Cup
- Sooji (Semolina) ½ Cup
- Namak (Salt) 1 & ½ tsp or to taste
- Sugar powdered 1 & ½ tbs
- Ghee (Clarified butter) 2-3 tbs
- Lukewarm water 1 & ½ Cup or as required
- Ghee (Clarified butter) 1 tsp
Garlic Lacha Paratha (Prepare Garlic Flavored Ghee):
- Ghee (Clarified butter) 5-6 tbs
- Lal mirch (Red chilli) crushed 2 tsp
- Lehsan (Garlic) chopped 3 tbs
- Hara dhania (Fresh coriander) chopped 1 tbs
- Ghee (Clarified butter) 1-2 tsp
Tandoori Lacha Paratha (Paratha Tandoori Flavored Ghee):
- Ghee (Clarified butter) 5-6 tbs
- Tandoori masala 1 tbs
- Lemon juice ½ tbs
- Hara dhania (Fresh coriander) chopped 2-3 tbs
- Ghee (Clarified butter) 1-2 tsp
Mint Lacha Paratha (Prepare Mint Flavored Ghee):
- Podina (Mint leaves) 1 Cup (wash & pat dry properly)
- Ghee (Clarified butter) 5-6 tbs
- Hari mirch (Green chilli) chopped 2 tbs
- Sukha podina (Dried mint) 3 tbs
- Ghee (Clarified butter) 1-2 tsp
Directions:
Prepare Dough:
In a bowl,add white chakki flour,all-purpose flour,semolina,salt,sugar & mix well.
Add clarified butter & mix well until it crumbles.
Gradually add lukewarm water,mix well & knead until dough is formed.
Grease dough with clarified butter & knead again,cover & let it rest for 30 minutes.
Knead dough again until smooth (3-4 minutes).
Garlic Lacha Paratha (Prepare Garlic Flavored Ghee):
In a bowl,add clarified butter,red chilli crushed,garlic,fresh coriander,mix well & set aside.
Take a small dough (110g),make a ball,sprinkle dry flour & roll out with the help of rolling pin.
On a rolled dough,add & spread garlic flavored ghee (2 tbs),sprinkle dry flour,fold like a fan,twist & roll to make a dough ball.
Press & spread gently to make a paratha.
On heated griddle,place rolled paratha,add clarified butter & cook paratha from both sides until golden & crispy (makes 3).
Tandoori Lacha Paratha (Prepare Tandoori Flavored Ghee):
In a bowl,add clarified butter,tandoori masala,lemon juice,fresh coriander,mix well & set aside.
Take a small dough (110g),make a ball,sprinkle dry flour & roll out with the help of rolling pin.
On a rolled dough,add & spread tandoori flavored ghee & ghee filling (2 tbs),sprinkle dry flour,fold like fan,twist & roll to make a dough ball.
Press & spread gently to make a paratha.
On heated griddle,place rolled paratha,add clarified butter & cook paratha from both sides until golden & crispy (makes 3).
Mint Lacha Paratha (Prepare Mint Flavored Ghee):
Microwave mint leaves for 3-4 minutes (check & toss in between until dried completely) then crush dried mint leaves with the help of hand & set aside.
In a bowl,add clarified butter,green chilli,dried mint,mix well & set aside.
Take a small dough (110g),make a ball,sprinkle dry flour & roll out with the help of rolling pin.
On a rolled dough,add & spread mint flavored ghee (2 tbs),sprinkle dry flour,fold like a fan,twist & roll to make a dough ball.
Press & spread gently to make a paratha.
On heated griddle,place rolled paratha,add clarified butter & cook paratha from both sides until golden & crispy (makes 3).

Ghee dal dein aur crumble hunay tak ache tarhan mix ker lein.
Thora thora ker ka neem garam pani shamil karein aur ghond ker dough tayyar ker lein.
Ghee dal ker dough ko dubara ghond lein aur dhak ker 30 minutes kliya chor dein.
Dough ko smooth hunay tak dubara ghond lein (3-4 minutes).

Rolled dough per lehsan flavored ghee (2 tbs) dal ker pheela lein,maida chirak dein,fan ki tarhan fold ker lein phir twist ker ka roll karein aur dough ball bana lein.
Press ker ka gently spread ker lein aur paratha tayyar ker lein.
Garam tawa per rolled paratha rakh dein aur ghee dal ker paratha ko dono sides sa golden & crispy ho janay tak paka lein (makes 3).
