Ingredients:
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Himalayan pink salt ½ tsp or to taste
-Ajwain (Carom seeds) ¼ tsp
-Kashmiri lal mirch (Kashmiri red chilli) powder 2 tsp
-Dhania powder (Coriander powder) 1 tsp
-Haldi powder (Turmeric powder) 1 tsp
-Adrak lehsan paste (Ginger garlic paste) 1 tsp
-Lemon juice 2 tbs
-Surmai (King fish) pieces 750g or Fish of your choice
-Cooking oil 2-3 tbs
-Pyaz (Onion) sliced 2 medium
-Lehsan (Garlic) 6-7 cloves
-Hari mirch (Green chilli) 5-6
-Zeera (Cumin seeds) 2 tsp
-Sabut kali mirch (Black peppercorns) 12-15
-Lal mirch (Red chilli) crushed 1 tsp
-Kari patta (Curry leaves) 8-10
-Hara dhania (Fresh coriander) handful
-Himalayan pink salt ½ tsp or to taste
-Cooking oil 4-5 tbs
-Cooking oil 2-3 tbs
-Kari patta (Curry leaves) 12-15
-Water ¼ Cup
-Hara dhania (Fresh coriander) chopped
Directions:
-In a bowl,add red chilli powder,pink salt,carom seeds,kashmiri red chilli powder,coriander powder, turmeric powder,ginger garlic paste,lemon juice & mix well.
-In a dish,add king fish pieces,prepared marinade,rub evenly,cover with cling film & marinate for 1 hour.
-In a frying pan,add cooking oil,onion,garlic,green chillies,cumin seeds,black peppercorns,red chilli crushed,mix well & cook on medium flame for 2-3 minutes.
-Let it cool.
-In mortal & pestle,add cooked masala,curry leaves,fresh coriander,pink salt & crush well to make a paste & set aside.
-On iron griddle,add cooking oil,marinated fish & fry on medium flame from both sides for 2-3 minutes.
-Now move the fish pieces to the side of griddle.
-In the center of the griddle,add cooking oil,curry leaves & prepared paste,mix well & cook on medium flame for 1-2 minutes.
-Add water & mix well.
-Now add fried fish pieces,cover & cook on low flame until oil separates (4-5 minutes).
-Turn sides,sprinkle fresh coriander & serve!

-Dish mein surmai aur tayyar marinade dal ker evenly rub ker lein,cling film sa cover karein aur 1 hour kliya marinate ker lein.
-Frying pan mein cooking oil,pyaz,lehsan,hari mirchein,zeera,sabut kali mirch & lal mirch crushed dal ker ache tarhan mix karein aur darmiyani ancch per 2-3 minutes kliya paka lein.
-Thanda ker lein.
-Mortal & pestle mein cooked masala,kari patta,hara dhania aur pink salt dal dein aur ache tarhan crush ker ka paste bana lein & side per rakh dein.
-Iron griddle mein cooking oil aur marinated fish dal dein aur darmiyani ancch per dono sides sa 2-3 minutes kliya fry ker lein.
-Ab fish pieces ko tawa ki ek side per ker dein.
-Tawa ka center mein cooking oil,kari patta aur tayyar paste dal ker ache tarhan mix karein aur darmiyani ancch per 1-2 minutes kliya paka lein.
-Pani dal ker mix ker lein.
-Ab fried fish pieces rakh dein aur dhak ker halki ancch per oil alag ho jaay tak paka lein (4-5 minutes).
-Sides ko turn karein aur hara dhania dal ker serve karein!
