Ingredients:

Prepare Chaat Masala:

-Sabut kali mirch (Black peppercorns) 1 tsp

-Sabut dhania (Coriander seeds) 1 & ½ tbs

-Zeera (Cumin seeds) 1 tbs

-Ajwain (Carom seeds) ½ tsp

-Sonth (Dried ginger) 1-inch piece

-Lal mirch (Red chilli) crushed 1 & ½ tbs

-Sugar ½ tsp

-Himalayan pink salt 1 & ½ tsp

-Tatri (Citric acid) ½ tsp

-Kala namak (Black salt) 1 & ½ tsp

Prepare Baisan Boondi:

-Baisan (Gram flour) sifted 1 Cup

-Himalayan pink salt ½ tsp or to taste

-Haldi powder (Turmeric powder) ¼ tsp

-Baking soda ¼ tsp

-Lal mirch powder (Red chilli powder) ¼ tsp or to taste

-Zarda ka rang (Orange food color) 1 pinch

-Water ½ Cup or as required

-Cooking oil 1 & ½ tsp

-Cooking oil for frying

Prepare Khatta Pani:

-Water 5 Cups or as required

-Imli pulp (Tamarind pulp) 5-6 tbs or to taste

-Chanay (Chickpeas) boiled 2 Cups

-Aloo (Potatoes) boiled & cubes 3 medium

-Pyaz (Onion) rings 1 medium

-Hara dhania (Fresh coriander) chopped

 

Directions:

Prepare Chaat Masala:

-In a frying pan,add black peppercorns,coriander seeds,cumin seeds,carom seeds,dried ginger,mix well & dry roast until fragrant (2-3 minutes).

-Add red chilli crushed & mix well.

-In a mortal & pestle,add roasted spices,sugar,pink salt,citric acid,black salt & crush coarsely.Chaat masala is ready!

Prepare Baisan Boondi:

-In a bowl,add gram flour,pink salt,turmeric powder,baking soda,red chilli powder,orange food color, gradually add water & whisk well for 2-3 minutes.

-Add cooking oil & whisk well.

-In a wok,heat cooking oil,hold perforated spoon (a big round spoon with multiple small holes in it) & pour prepared batter on the spoon.

-Tap its edges so the droplets of batter fall in the cooking oil & fry on medium flame until golden & crispy.

Prepare Khatta Pani:

-In a large bowl,add water,tamarind pulp,prepared chaat masala (5 tbs or to taste) & mix well.

-Add chickpeas,potatoes,onion,prepared baisan boondi,fresh coriander & mix well.

-Sprinkle prepared chaat masala & serve!
