Ingredients:
-Boneless beef with 10% fat (Charbi) ½ kg
-Dahi (Yogurt) hung 2 tbs
-Pyaz (Onion) fried 2 tbs
-Besan (Gram flour) roasted 3 tbs
-Namak (Salt) 1 tsp or to taste
-Lal mirch powder (Red chilli powder) 1 tbs or to taste
-Zeera (Cumin powder) roasted & crushed 1 & ½ tsp
-Meat tenderizer ½ tbs
-Haldi powder (Turmeric powder) ½ tsp
-Garam masala powder ½ tsp
-Elaichi powder (Cardamom powder) ¼ tsp
-Jaifil powder (Nutmeg powder) ¼ tsp
-Javitri powder (Mace powder) ¼ tsp
-Pyaz (Onion) 3 medium
-Adrak (Ginger) chopped 1 tsp
-Hari mirch (Green chilli) chopped 1 tbs
-Amchor powder (Dried mango powder) 1 tsp
-Hara dhania (Fresh coriander) chopped handful
-Cooking oil 3-4 tbs
Directions:
-In a chopper,add beef,yogurt,fried onion,gram flour,salt,red chilli powder,cumin seeds,meat tenderizer,turmeric powder,garam masala powder,cardamom powder,nutmeg powder & mace powder,chop well & marinate for 2 hours.
-In a bowl,place a muslin cloth,grate onion with the help of grater & squeeze out water completely.
-In a bowl,add grated & squeeze onion,ginger,green chilli,dried mango powder,fresh coriander,mix well & set aside.
-Grease hands with oil,take a small quantity of mixture (50g),make a ball & flatten on your palm,add prepared filling,cover properly & make kebabs of equal sizes (makes 11-12).
-In a frying pan,add cooking oil and fry kebabs on medium flame from both sides until golden brown & cover in between for 1-2 minutes (on low flame).
-Serve with chutney or tomato ketchup!

-Chopper mein beef,dahi,fried pyaz,besan,namak,lal mirch powder,zeera,meat tenderizer,haldi powder,garam masala powder,elachi powder,jaifil powder,javitri powder dal ker ache tarhan chop ker lein aur 2 hours kliya marinate ker lein.
-Bowl mein malmal ka kapra rakh dein aur garter ki madad sa pyaz ko grate ker lein aur ache tarhan squeeze ker lein.
-Bowl mein grated & squeeze pyaz,hari mirch,amchor powder aur hara dhania dal ker ache tarhan mix ker lein & side per rakh dein.
-Haathon ko oil sa grease karein aur mixture ki small quantity (50g) la ker ball bana lein aur hateeli per pheela lein,tayyar filling dal ker properly cover ker lein aur ek jaisay sizes ka kabab tayyar ker lein (makes 11-12).
-Frying pan mein cooking oil garam karein aur kebabs ko dono sides sa darmiyani ancch per golden brown ho janay tak fry ker lein aur bech mein dhak ker halki ancch per 1-2 minutes kliya paka lein.
-Chutney or tomato ketchup ka saath serve karein!
