Ingredients:

- Tamatar (Tomatoes) halved 1 kg
- Water as required
- Cooking oil ¼ Cup
- Adrak lehsan paste (Ginger garlic paste) 3 tbs
- Kali mirch (Black pepper) crushed ½ tbs
- Zeera (Cumin seeds) roasted & crushed 1 tsp
- Sabut dhania (Coriander seeds) crushed 1 & ½ tbs
- Lal mirch (Red chilli) crushed 1 & ½ tbs
- Haldi powder (Turmeric powder) 1 & ½ tsp
- Namak (Salt) ½ tbs or to taste
- Kasuri meethi (Dried fenugreek leaves) 2 tbs
- Dahi (Yogurt) hung & whisked 1 & ½ Cup

- Cooking oil 2-3 tbs
- Chicken mix boti ½ kg
- Adrak (Ginger) julienne 1 inch piece
- Hari mirch (Green chillies) 4-5
- Kasuri methi (Dried fenugreek) ½ tsp
- Sabut dhania (Coriander seeds) crushed 1 pinch
- Adrak (Ginger) julienne
- Sabut dhania (Coriander seeds) crushed
Directions:
Prepare Karahi Cooking Sauce: (Make & Store)
In frying pan,add tomatoes,water and bring it to boil,cover and blanch for 2-3 minutes.
Turn off the flame and remove skin then slightly crush tomatoes & set aside.
In a wok,add cooking oil,blanched tomatoes along with water,mix well and cook for a minute and mash well with the help of masher.
Add ginger garlic paste,mix well and cook for minute.
Add black pepper crushed,cumin seeds,coriander seeds,red chilli crushed,turmeric powder,salt, dried fenugreek leaves,mix well and cook for 1-2 minutes.
Turn off the flame,add yogurt and mix well.
Turn on the flame,cover and cook on low flame until oil separates (5-6 minutes).
Let it cool (yields approx. 1000g).
Store in clean & sterilized jar.
Storage:
1 month in freezer.
1 week in refrigerator.
How to Prepare Karahi Gosht with Homemade Karahi Cooking Sauce: Cooking Time: 15-20 minutes
In a wok,add cooking oil,chicken,mix well & fry until light golden.
Add prepared homemade karahi cooking sauce (500g) & mix well,cover & cook on medium flame for 8-10 minutes then cook on high flame until oil separates (4-5 minutes).
Add ginger,green chillies,dried fenugreek leaves and coriander seeds,cover & simmer on low flame for 1-2 minutes.
Garnish with ginger,coriander seeds & serve with naan.

Frying pan mein tamatar aur pani dal ker ubal lein aur dhak ker 2-3 minutes kliya blanch ker lein.
Chulha bund ker dein,skin ko remove ker lein phir slightly crush ker lein & side per rakh dein.
Karahi mein cooking oil aur blanched tamatar pani ka saath dal dein aur ache tarhan mix ker ka ek minute kliya paka lein phir masher ki madad sa ache tarhan mash ker lein.
Adrak lehsan paste dal ker ache tarhan mix karein aur ek minute kliya paka lein.
Kali mirch crushed,zeera,sabut dhania,lal mirch crushed,haldi powder,namak aur kasuri meethi dal ker ache tarhan mix karein aur 1-2 minute kliya paka lein.
Chulha bund ker dein aur dahi dal ker ache tarhan mix ker lein.
Chulha on karein aur dhak ker halki ancch per oil alag ho janay tak paka lein (5-6 minutes).
Thanda ker lein (yields approx. 1000g).
Clean & sterilized jar mein store ker lein.
