Ingredients:
-Beef kaleji (Liver) 350g

-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Hari mirch (Green chillies) 4-5
-Adrak (Ginger) 2-inch piece

-Pyaz (Onion) sliced 1 small
-Himalayan pink salt ¼ tsp or to taste
-Cooking oil ¼ Cup
-Sabut kali mirch (Black peppercorns) 8-10
-Laung (Cloves) 3-4
-Badi elaichi (Black cardamom) 1
-Darchini (Cinnamon sticks) 2
-Pyaz (Onion) finely chopped 1 Cup
-Tamatar (Tomatoes) finely chopped 1 Cup
-Dhania powder (Coriander powder) ½ tbs
-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tsp
-Garam masala powder 1 tsp
-Haldi powder (Turmeric powder) ½ tsp
-Zeera powder (Cumin powder) 1 tsp
-Lal mirch powder (Red chilli powder) 1 & ½ tsp or to taste
-Dahi (Yogurt) whisked 4 tbs
-Beef qeema (Mince) 350g lean
-Water 1 Cup or as required
-Himalayan pink salt 1 tsp or to taste
-Kasuri methi (Dried fenugreek leaves) 1 tsp
-Hara dhania (Fresh coriander) chopped handful
-Hari mirch (Green chilli) sliced 1-2

Directions:
-Carefully remove the upper thin membrane of beef liver & cut in small cubes.
-In a bowl,add water,beef liver,ginger garlic paste & mix well,cover & let it rest for 15-20 minutes then strain,rinse with water & set aside.
-In a mortal & pestle,add green chillies,ginger,garlic,onion,pink salt,crush coarsely or use chopper & set aside.
-In a wok,add cooking oil & heat it.
-Add black peppercorns,cloves,black cardamom,cinnamon sticks & mix well.
-Add onion,mix well & sauté for 1-2 minutes.
-Add tomatoes,crushed masala,mix well & cook for 2 minutes.
-Add coriander powder,kashmiri red chilli powder,garam masala powder,turmeric powder,cumin powder, red chilli powder,yogurt,mix well & cook on medium flame until oil separates (2-3 minutes).
-Add beef mince & mix well.
-Add water,mix well,cover & cook on low flame for 10-12 minutes.
-Add beef liver & mix well,cover & cook on low flame for 8-10 minutes.
-Add pink salt,dried fenugreek leaves & mix well.
-Add fresh coriander & green chilli.
-Garnish with green chilli,fresh coriander & serve!

Directions:
-Beef kaleji ki upper thin membrane ko carefully remove ker lein aur small cubes mein cut ker lein.
-Bowl mein pani,beef kaleji aur adrak lehsan paste dal ker ache tarhan mix karein aur 15-20 minutes kliya chor dein phir strain ker ka pani sad ho lein & side per rakh dein.
-Mortal & pestle mein hari mirchein,adrak,lehsan,pyaz aur pink salt dal ker coarsely crush ker lein & side per rakh dein.
-Karahi mein cooking oil dal ker garam ker lein.
-Sabut kali mirch,laung,badi elaichi aur darchini dal ker ache tarhan mix karein.
-Pyaz dal dein aur 1-2 minutes kliya sauté ker lein.
-Tamatar aur crushed masala dal ker ache tarhan mix karein aur 2 minute kliya paka lein.
-Dhania powder,Kashmiri lal mirch powder,garam masala powder,haldi powder,zeera powder,lal mirch powder aur dahi dal ker ache tarhan mix karein aur darmiyani ancch per oil alag ho janay tak paka lein (2-3 minutes).
-Beef qeema dal ker ache tarhan mix ker lein.
-Pani dal ker ache tarhan mix karein aur dhak ker halki ancch per 10-12 minutes kliya paka lein.
-Beef liver dal ker ache tarhan mix karein aur dhak ker halki ancch per 8-10 minutes kliya paka lein.
-Pink salt aur kasuri methi dal ker ache tarhan mix ker lein.
-Hara dhania aur hari mirch dal dein.
-Hari mirch aur hara dhania sa garnish ker ka serve karein!
