Ingredients:
-Kacha papita (Raw papaya) 2-inch piece
-Hari mirch (Green chillies) 4-5
-Pyaz (Onion) fried ¼ Cup
-Hara dhania (Fresh coriander) handful
-Podina (Mint) 7-8 leaves
-Boneless beef cubes ½ kg (lean)
-Baisan (Gram flour) roasted 3 tbs
-Lal mirch powder (Red chilli powder) ½ tbs or to taste
-Garam masala powder ½ tsp
-Namak (Salt) 1 tsp or to taste
-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tsp
-Kali mirch powder (Black pepper powder) ½ tsp
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Ghee (Clarified butter) 2 tbs
-Darchini (Cinnamon sticks) 2
-Hari elaichi (Green cardamom) 4-5
-Zeera (Cumin seeds) 1 tsp
-Badam (Almonds) soaked 14-15
-Kewra water ½ tsp
-Water 3 tbs or as required
-Dahi (Yogurt) 1 & ½ Cup
-Pyaz (Onion) fried ½ Cup
-Dhania powder (Coriander powder) 1 & ½ tbs
-Kashmiri lal mirch (Kashmiri red chilli) powder 2 tsp
-Namak (Salt) 1 tsp or to taste
-Lal mirch powder (Red chilli powder) 1 & ½ tsp or to taste
-Sabut kali mirch (Black peppercorns) ½ tsp
-Laung (Cloves) 7-8
-Hari elaichi (Green cardamom) 6-7
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Ghee (Clarified butter) 1/3 Cup
-Water ½ Cup or as required
Directions:
-In a chopper,add raw papaya,green chillies,fried onion,fresh coriander,mint leaves & chop well.
-Add beef,gram flour,red chilli powder,garam masala powder,salt,Kashmiri red chilli powder,black pepper powder,ginger garlic paste & chop well.
-With the help of greased hands,take small quantity of mixture (55g),make kababs of oval shape & thread on metal skewer.
-In a wok,add clarified butter,let it melt & fry kababs on medium flame until golden brown & set aside (makes 12).
-In a spice grinder,add cinnamon sticks,green cardamom,cumin seeds,soaked almonds along with water,kewra water,water,blend well & set aside.
-Remove wok from the flame,add yogurt,ground paste,fried onion,coriander powder,kashmiri red chilli powder,salt,red chilli powder,black peppercorns,cloves,green cardamom,ginger garlic paste, clarified butter & mix well.
-Turn on the flame & cook for 2-3 minutes,cover & cook on medium low flame for 6-8 minutes.
-Add water & mix well.
-Now add fried kababs,cover & cook on low flame until tender (18-20 minutes) & serve!

-Greased haathon ki madad sa mixture ki small quantity (55g) lein aur oval shape ka kabab bana lein aur metal skewer per laga lein.
-Karahi mein ghee dal ker melt ker lein aur kababs ko darmiyani ancch per golden brown ho janay tak fry ker lein & side per rakh dein (makes 12).
-Spice grinder mein darchini,hari elaichi,zeera,soaked badam apani ka saath,kewra water aur pani dal ker ache tarhan blend ker lein & side per rakh dein.
-Karahi ko chulhay sa hata lein,dahi,ground paste,fried pyaz,dhania powder,Kashmiri lal mirch powder,namak,lal mirch powder,sabut kali mirch,laung,hari elaichi,adrak lehsan paste aur ghee dal ker ache tarhan mix ker lein.
-Chulha on karein aur 2-3 minutes kliya paka lein aur dhak ker darmiyani halki ancch per 6-8 minutes kliya paka lein.
-Pani dal ker ache tarhan mix karein.
-Fried kababs dal ker dhak dein aur halki ancch per gul janay tak paka lein (18-20 minutes) & serve karein!
