Ingredients:

Prepare Homemade Zafrani Kheer Mix:

-Bread slices 4

-Chawal (Rice) tota ½ Cup (washed & dried)

-Hari elaichi (Green cardamom) 9-10

-Sugar 2 Cups or to taste

-Dry milk powder 3 Cups

-Badam (Almonds) sliced ¼ Cup

-Zafran (Saffron strands) 1 tsp

Prepare Zafrani Kheer with Homemade Zafrani Kheer Mix:

-Doodh (Milk) 1 litre

-Homemade Zafrani kheer mix 1 & ½ Cup

-Badam (Almonds) sliced

-Zafran (Saffron strands)

 

Directions:

Prepare Homemade Zafrani Kheer Mix:

-In a chopper,add bread slices & chop well.

-In a frying pan,add bread crumbs & dry roast on low flame until light brown (4-5 minutes) & take out in a bowl & let it cool.

-In a small grinder,add rice,grind to make powder & take out in a same bowl.

-In a small grinder,add green cardamom,grind well & take out in a same bowl.

-In a small grinder,add sugar,grind to make powder & take out in a same bowl.

-In a same bowl,add dry milk powder,almonds,saffron strands & mix until well combined.Homemade Zafrani kheer mix is ready (Yields 1 kg approx. 25-30 servings)

-Can be stored in an airtight jar for up to 1 month in a cool & dry place.

Prepare Zafrani Kheer with Homemade Zafrani Kheer Mix:

-In a wok,add milk & bring it to boil.

-Add homemade zafrani kheer mix (1 & ½ Cup),whisk well & cook on low flame until desired consistency (12-15 minutes) & keep mixing in between.

-Take out in a serving cups,garnish with almonds,saffron strands & serve chilled!
