Ingredients:
Prepare Tikka Masala Cooking Sauce: (Make & Store)
- Cooking oil ¼ Cup
- Kaju (Cashew nuts) soaked 50g
- Pyaz (Onion) sliced 2 large
- Tamatar (Tomatoes) sliced 5 medium
- Adrak lehsan paste (Ginger garlic paste) 3 tbs
- Tomato paste 2 tbs
- Dhania powder (Coriander powder) 1 & ½ tbs
- amak (Salt) 1 & ½ tsp or to taste
- Lal mirch powder (Red chilli powder) 2 tbs or to taste
- Zeera powder (Cumin powder) 1 & ½ tbs
- Haldi powder (Turmeric powder) 1 & ½ tsp
- Kali mirch powder (Black pepper powder) 1 & ½ tsp
- Tatri (Citric acid) ¼ tsp
- Garam masala powder 1 & ½ tsp
- Zarda ka rang (Orange food color) ¼ tsp (optional)
- Kasuri meethi (Dried fenugreek leaves) 1 & ½ tsp
- Lemon juice 2-3 tbs
- Dahi (Yogurt) thick & whisked ½ Cup
- Water 1 Cup or as required
Prepare Chicken Tikka Masala with Tikka Masala Cooking Sauce: (Preparation Time: 25 minutes):
- Chicken boneless cubes 500g
- Lemon juice 1 tsp
- Namak (Salt) ½ tsp or to taste
- Makhan (Butter) ½ tbs
- Cooking oil 1 tbs
- Cooking oil 3-4 tbs
- Water ½ Cup or as required
- Charcoal for smoke
Directions:
Prepare Chicken Tikka Masala Sauce:
In a wok,add cooking oil,cashew nuts,mix well and fry for 1-2 minutes.
Add onion,mix well and sauté until translucent.
Add tomatoes and mix well.
Add ginger garlic paste and mix well for a minute.
Add tomato paste and mix well.
Add coriander powder,salt,red chilli powder,cumin powder,turmeric powder,black pepper powder,citric acid,garam masala powder,orange food color,dried fenugreek leaves and lemon juice,mix well and cook for 1-2 minutes.
On low flame,add yogurt and mix well.
Add water and mix well,cover and cook on low flame for 5-6 minutes.
Let it cool.
In blender jug,add prepared mixture and blend to make a paste (yields approx. 1000g).
Store in clean & sterilized jar.
Storage:
1 month in freezer.
1 week in fridge.
Chicken tikka masala cooking sauce can be used for Chicken,Paneer and Vegetables.
Prepare Chicken Tikka Masala with Tikka Masala Cooking Sauce: (Preparation Time: 25 minutes):
In a bowl,add chicken,lemon juice and salt,mix well and marinate for 10 minutes.
In a wok,add butter,cooking oil and let it melt.
Add marinated chicken,mix well and cook on medium flame until light golden.
Add cooking oil,prepared homemade tikka masala sauce (400-500g),mix well and cook for 2-3 minutes.
Add water and mix well,cover and cook on low flame for 5-6 minutes.
Give coal smoke for 2 minutes (optional).
Garnish with cream & serve!

Pyaz dal dein aur translucent hunay tak saute ker lein.
Tamatar dal ker ache tarhan mix ker lein.
Adrak lehsan paste dal dein aur ek minute kliya ache tarhan mix ker lein.
Tomato paste dal ker ache tarhan mix karein.
Dhania powder,namak,lal mirch powder,zeera powder,haldi powder,kali mirch powder,tatri,garam masala powder,zarda ka rang,kasuri meethi aur lemon juice dal ker ache tarhan mix karein aur 1-2 minute kliya paka lein.
Halki ancch per dahi dal ker ache tarhan mix ker lein.
Pani dal ker ache tarhan mix karei aur dhak ker halki ancch per 5-6 minutes kliya paka lein.
Thada ker lein.
Blender jug mein tayyar mixture dal dein aur ache tarhan blend ker ka paste tayyar ker lein (yields approx. 1000g).
Clean & sterilized jar mein store ker lein.

Cooking oil aur tayyar homemade tikka masala sauce (400-500g) dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
Pani dal ker mix karein aur dhak ker halki ancch per 5-6 minutes kliya paka lein.
2 minute kliya koyla ka dhuwan dein (optional).
Cream sa garnish ker ka serve karein.
