Ingredients:
- Lauki (Bottle gourd) 2 & ½ kg
- Doodh (Milk) 1 liter
- Green food color 1 tsp or as required (optional)
- Elaichi powder (Cardamom powder) ½ tsp
- Sugar 1 & ½ Cup or to taste
- Desi ghee 1 & ½ Cup or as required
- Badam (Almonds) blanched & sliced 3 tbs
- Pista (Pistachios) sliced 3 tbs
- Kishmish (Raisins) 3 tbs
- Desi Ghee 1 tsp
- Khoya 500g
- Chandi warq (Edible silver leaf)
- Tutti Frutti
- Pista (Pistachios) sliced
- Badam (Almonds) sliced
Directions:
Peel bottle gourd & remove its seeds, grate them in longer strands in a bowl and set aside (approx. 2 & ½ kg).
In a wok add grated bottle gourd & cook on low to medium flame until bottle gourds release water & then completely dried (approx. 25-30 minutes).
Add milk, mix well & bring it to boil, then cook on medium flame for 12-15 minutes.
Add green food color, mix well & cook until milk is reduced.
Add cardamom powder, sugar, mix well & cook until sugar is melted. Cook on medium flame until it dries up (12-15 minutes).
In a frying pan add ghee & let it melt.
Add almonds, pistachios, raisins, mix well & fry until light golden.
Add fried nuts along with ghee in lauki ka halwa, mix well & cook on medium flame for 15-20 minutes or until ghee separates.
You can add khoya at this point & mix well or layer it as shown in describe in next step, then set aside.
In a frying pan add ghee & let it melt.
Add khoya, mix well & cook on low flame until it melts (approx. 2-3 minutes) then set aside.
In a serving dish add lauki halwa & spread evenly.
Add melted khoya on top & spread even layer.
Garnish it with edible silver leaf, tutti frutti & pistachios, serve!

Aik wok may grate ki hui lauki daal kar darmiani anch par itna pakayen k lauki pan ichor day or phir pani khushk hojaye (approx. 25-30 minutes).
Doodh daal kara chi tarah mix karen or ubal anay den, phir darmiani anch par 12-15 minutes tak pakayen.

Aik frying pan may ghee daal kar garam karlen.
Badam, pista or kishmish daal kar light golden honay tak fry karlen.
Ab fry kiye huye nuts lauki k halwa may daal kara chi tarha milayen or darmiani anch par 15-20 minutes taky a phir itna pakayen k ghee alag hojaye.
Is point pe khoya daal kara chi tarah mila len ya phir jaise agay describe kia hai is tarah layer karlen.
Aik frying pan may ghee garam karen.
Khoya daal kar halki anch par itna pakayen k khoya pighal kar naram hojaye.
Serving dish may lauki ka halwa nikal kar phela len.
Ab is par naram kia hua khoya daal kar phela len. Chandi ka warq, tutti frutti or pista se garnish kar k serve karen!
