Golden Daal Platter with Karelay ke Chips

Recipe in English:

 

Ingredients:

Prepare Golden Daal:

-Moong daal (Yellow lentil) ¾ Cup (soaked 1 hour)

-Masoor daal (Red lentil) ¾ Cup (soaked 1 hour)

-Water 5 Cups or as required

-Tamatar (Tomatoes) 2 medium

-Adrak lehsan (Ginger garlic) crushed 1 tbs

-Hari mirch (Green chilli) crushed 1 tbs

-Tez patta (Bay leaves) 2

-Badi elaichi (Black cardamom) 1

-Hari elaichi (Green cardamom) 2

-Zeera (Cumin seeds) roasted & crushed 1 tsp

-Haldi powder (Turmeric powder) ½ tsp

-Dhania powder (Coriander powder) 1 tsp

-Garam masala powder ½ tsp

-Water ¾ Cup or as required

-Himalayan pink salt 1 & ½ tsp or to taste

-Kali mirch (Black pepper) crushed 1 tsp

Prepare Tarka:

-Cooking oil ¼ Cup

-Lehsan (Garlic) sliced 3-4 cloves

-Zeera (Cumin seeds) 1 tsp

-Sukhi lal mirch (Dried red chillies) 3-4

-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tsp

-Anday (Eggs) boiled & sliced 2

-Hara dhania (Fresh coriander) chopped

Prepare Karelay ke Chips:

-Karelay (Bitter gourd) 3 medium

-Himalayan pink salt ½ tbs or to taste

-Sabut dhania (Coriander seeds) crushed 1 tsp

-Haldi powder (Turmeric powder) ½ tsp

-Zeera powder (Cumin powder) 1 tsp

-Saunf (Fennel seeds) powder ½ tsp

-Baisan (Gram flour) 3 tbs or as required

-Lal micrh powder (Red chilli powder) 1 tsp or to taste

-Himalayan pink salt ½ tbs or to taste

-Chaat masala 1 tsp

-Cooking oil for frying

-Lemon juice

-Chaat masala

 

Directions:

Prepare Golden Daal:

-In a pot,add red lentil,yellow lentil,water & bring it to boil.

-Remove scum,add tomatoes,ginger garlic crushed,green chilli,bay leaves,black cardamom,green cardamom,cumin seeds,turmeric powder,coriander powder,garam masala powder & mix well,cover & cook on low flame for 30 minutes.Check & stir in between & add some hot water if required.

-Remove tomato skin & discard & remove whole spices.

-Turn off the flame & mash well with the help of wooden masher.

-Turn on the flame,add water & mix well.

-Add pink salt,black pepper crushed,mix well & cook on low flame for 2-3 minutes.

Prepare Tarka:

-In a frying pan,add cooking oil,garlic & mix well.

-Add cumin seeds,dried red chillies,kashmiri red chilli powder & mix well.

-Add boiled eggs,mix well & fry for 1-2 minutes.

-Now add prepared tarka in cooked daal pot & mix well.

-Garnish with fresh coriander & serve!

Prepare Karelay ke Chips:

-Cut thin slices of bitter gourd & deseed them.

-In a bowl,add bitter gourd,pink salt & mix well,cover & let it rest for 10 minutes then rinse with water & strain.

-Add coriander seeds,turmeric powder,cumin powder,fennel powder,gram flour,red chilli powder,pink salt,chaat masala & mix well.

-In a wok,heat cooking oil & fry on medium flame for 2-3 minutes than fry on low flame until golden & crispy (10-12 minutes).

-Add lemon juice & sprinkle chaat masala.

-Serve golden daal with boiled rice & karelay ke chips.
