Ingredients:
Prepare Golden Daal:
-Moong daal (Yellow lentil) ¾ Cup (soaked 1 hour)
-Masoor daal (Red lentil) ¾ Cup (soaked 1 hour)
-Water 5 Cups or as required
-Tamatar (Tomatoes) 2 medium
-Adrak lehsan (Ginger garlic) crushed 1 tbs
-Hari mirch (Green chilli) crushed 1 tbs
-Tez patta (Bay leaves) 2
-Badi elaichi (Black cardamom) 1
-Hari elaichi (Green cardamom) 2
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Haldi powder (Turmeric powder) ½ tsp
-Dhania powder (Coriander powder) 1 tsp
-Garam masala powder ½ tsp
-Water ¾ Cup or as required
-Himalayan pink salt 1 & ½ tsp or to taste
-Kali mirch (Black pepper) crushed 1 tsp
Prepare Tarka:
-Cooking oil ¼ Cup
-Lehsan (Garlic) sliced 3-4 cloves
-Zeera (Cumin seeds) 1 tsp
-Sukhi lal mirch (Dried red chillies) 3-4
-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tsp
-Anday (Eggs) boiled & sliced 2
-Hara dhania (Fresh coriander) chopped
Prepare Karelay ke Chips:
-Karelay (Bitter gourd) 3 medium
-Himalayan pink salt ½ tbs or to taste
-Sabut dhania (Coriander seeds) crushed 1 tsp
-Haldi powder (Turmeric powder) ½ tsp
-Zeera powder (Cumin powder) 1 tsp
-Saunf (Fennel seeds) powder ½ tsp
-Baisan (Gram flour) 3 tbs or as required
-Lal micrh powder (Red chilli powder) 1 tsp or to taste
-Himalayan pink salt ½ tbs or to taste
-Chaat masala 1 tsp
-Cooking oil for frying
-Lemon juice
-Chaat masala
Directions:
Prepare Golden Daal:
-In a pot,add red lentil,yellow lentil,water & bring it to boil.
-Remove scum,add tomatoes,ginger garlic crushed,green chilli,bay leaves,black cardamom,green cardamom,cumin seeds,turmeric powder,coriander powder,garam masala powder & mix well,cover & cook on low flame for 30 minutes.Check & stir in between & add some hot water if required.
-Remove tomato skin & discard & remove whole spices.
-Turn off the flame & mash well with the help of wooden masher.
-Turn on the flame,add water & mix well.
-Add pink salt,black pepper crushed,mix well & cook on low flame for 2-3 minutes.
Prepare Tarka:
-In a frying pan,add cooking oil,garlic & mix well.
-Add cumin seeds,dried red chillies,kashmiri red chilli powder & mix well.
-Add boiled eggs,mix well & fry for 1-2 minutes.
-Now add prepared tarka in cooked daal pot & mix well.
-Garnish with fresh coriander & serve!
Prepare Karelay ke Chips:
-Cut thin slices of bitter gourd & deseed them.
-In a bowl,add bitter gourd,pink salt & mix well,cover & let it rest for 10 minutes then rinse with water & strain.
-Add coriander seeds,turmeric powder,cumin powder,fennel powder,gram flour,red chilli powder,pink salt,chaat masala & mix well.
-In a wok,heat cooking oil & fry on medium flame for 2-3 minutes than fry on low flame until golden & crispy (10-12 minutes).
-Add lemon juice & sprinkle chaat masala.
-Serve golden daal with boiled rice & karelay ke chips.

-Pot mein moong daal,masoor daal aur pani dal ker ubal lein.
-Scum ko remove ker lein,tamatar,adrak lehsan crushed,hari mirch,tez patta,badi elaichi,hari elaichi, zeera,haldi powder,dhania powder aur garam masala powder dal ker ache tarhan mix karein aur dhak ker halki ancch per 30 minutes kliya paka lein.Bech mein chamcha chala lein aur agar zaroorat ho tou garam pani shamil ker lein.
-Tamatar skin aur whole spices ko nikal ker discard ker dein.
-Chulha bund ker dein aur wooden masher ki madad sa ache tarhan mash ker lein.
-Chulha on karein aur pani dal ker mix ker lein.
-Pink salt aur kali mirch crushed dal ker ache tarhan mix karein aur halki ancch per 2-3 minutes kliya paka lein.
Prepare Tarka:
-Frying pan mein cooking oi aur lehsan dal ker mix ker lein.
-Zeera,sukhi lal mirch aur kashmiri lal mirch powder dal ker ache tarhan mix ker lein.
-Boiled anday dal ker ache tarhan mix karein aur 1-2 minutes kliya fry ker lein.
-Ab tayyar tarka ko cooked daal mein dal ker mix ker lein.
-Hara dhania dal ker serve karein!
Prepare Karelay ke Chips:
-Karelay ka thin slices cut ker ka seeds nikal lein.
-Bowl mein karelay aur pink salt dal ker ache tarhan mix karein aur dhak er 10 minutes kliya chor dein phir pani sa dho ker strain ker lein.
-Sabut dhania,haldi powder,zeera powder,saunf powder,baisan,lal mirch powder,pink salt aur garam masala powder dal ker ache tarhan mix ker lein.
-Karahi mein cooing oil garam jareun aur darmiyani ancch per 2-3 minutes kliya paka lein phir halki ancch per golden & crispy (10-12 minutes) ho janay tak fry ker lein.
-Lemon juice & chaat masala dal dein.
-Golden daal ko boiled rice & karelay ke chips ka saath serve karein!
