Ingredients:
-Olper’s Milk 1 litre
-Gajar (Carrots) peeled slices 1 & ½ kg
-Sugar 1 Cup or to taste
-Elaichi ka danay (Cardamom seeds) crushed ½ tbs
-Olper’s Tarrka Desi Ghee 1 Cup
-Kaju (Cashew nuts) ½ Cup
-Badam (Almonds) ½ Cup
-Pista (Pistachios) ½ Cup
-Khoya/Mawa 150g
-Chandi warq (Edible silver leaves)
-Khoya/Mawa
-Fried nuts
Directions:
-In a wok,add milk & bring it to boil.
-Add carrots,mix well & cook on medium flame for 2-3 minutes,cover & cook on low flame until carrots are tender (20-25 minutes) (cook until milk is reduced to 1 cup) then mash well with the help of masher.
-Add sugar,cardamom seeds,mix well & cook on low flame for 10-15 minutes.
-In a frying pan,add desi ghee & let it melt.
-Add cashew nuts,almonds,pistachios,mix well & fry until light golden (1-2 minutes).
-In gajar halwa,add fried nuts,mix well & cook on medium flame until ghee separates (20-25 minutes) & mix continuously.
-Turn off the flame,add khoya/mawa & give it a good mix (Yields: 1600g)
-Garnish with edible silver leaves,khoya/mawa,fried nuts & serve!

-Karahi mein doodh dal ker ubal lein.
-Gajar dal ker ache tarhan mix karein aur darmiyani ancch per 2-3 minutes kliya paka lein aur dhak ker halki ancch per gajar gul janay tak paka lein (20-25 minutes) (cook until milk is reduced to 1 cup) phir masher ki madad sa ache tarhan mash ker lein.
-Cheeni & elaichi powder dal ker ache tarhan mix karein aur halki ancch per 10-15 minutes kliya paka lein.
-Frying pan mein desi ghee dal ker melt ker lein.
-Kaju,badam aur pista dal ker ache tarhan mix karein aur light golden ho janay tak fry ker lein (1-2 minutes).
-Gajar ka halwa mein fried nuts dal ker ache tarhan mix karein aur darmiyani ancch per ghee alag ho janay tak paka lein (20-25 minutes) & musalsal mix kertay rahein.
-Chulha bund ker dein aur khoya/mawa dal ker mix ker lein (Yields: 1600g)
-Chandi warq,khoya/mawa aur fried nuts sa garnish ker ka serve karein!
