Ingredients:

Prepare Creamy Veg Filling:

-Makhan (Butter) 2 tbs

-Lehsan (Garlic) chopped ½ tbs

-Maida (All-purpose flour) 1 & ½ tbs

-Chicken stock 1 Cup

-Corn kernels boiled 1 & ½ Cup

-Himalayan pink salt ½ tsp or to taste

-Lal mirch (Red chilli) crushed 1 & ½ tsp

-Kali mirch (Black pepper) crushed 1 tsp

-Olper’s Cream ¾ Cup (room temperature)

-Olper’s Cheddar cheese 2 tbs (optional)

-Pickled jalapenos sliced ½ Cup

-Hara pyaz (Spring onion) leaves chopped ¼ Cup

Prepare Samosa Dough:

-Maida (All-purpose flour) sifted 3 Cups

-Himalayan pink salt 1 & ½ tsp

-Sugar powdered ½ tbs

-Ghee (Clarified butter) 3 tbs

-Water ¾ Cup or as required

-Maida (All-purpose flour) sifted 1 Cup

-Makhan (Butter) ½ Cup

-Cooking oil for frying

 

Directions:

Prepare Creamy Veg Filling:

-In a wok,add butter & let it melt.

-Add garlic & sauté for a minute.

-Add all-purpose flour & mix well for a minute.

-Add chicken stock,mix well & cook until it thickens.

-Add corn kernels & mix well.

-Add pink salt,red chilli crushed,black pepper crushed,mix well & cook for 1-2 minutes.

-Turn off the flame,add cream & mix well.

-Turn on the flame,add cheddar cheese,mix well & cook until cheese melts.

-Add pickled jalapenos,spring onion & mix well.

-Let it cool.

Prepare Samosa Dough:

-In a bowl,add all-purpose flour,pink salt,sugar & mix well.

-Add clarified butter & mix well until it crumbles.

-Gradually add water,mix well & knead until hard dough is formed,wrap the cling film around the dough & let it rest for 30 minutes.

-In another bowl,add all-purpose flour,butter,mix well & gather the mixture until soft dough is formed,wrap with cling film & let it rest for 15-20 minutes.

-Knead dough until smooth (2-3 minutes) & divide the dough in 4 portions.

-Take one portion,make a ball & press gently to spread it with hands.

-Remove cling film from shortening dough & divide it into 4 portions,take one portion & make a ball.

-Place the shortening ball over the dough,cover properly from all sides & make a dough ball,press gently & roll out with the help of rolling pin.

-Roll & fold the dough,press & roll out with the help of rolling pin.

-Cut ½ inch pieces of dough with the help of knife.

-Take one portion & roll out with the help of rolling pin.

-Add prepared creamy veg filling,apply water on the edges,fold the dough,pinch & seal the edges.

-Apply water & twist the side of dough to create a design (makes 20-24).

-Can be stored in an airtight container for up to 1 month in freezer.

-In a wok,heat cooking oil (150°C) & fry on low flame until golden & crispy.

-Serve with tomato ketchup!
