Ingredients:
Prepare Fajita Seasoning:
-Lal mirch powder (Red chilli powder) 2 tbs or to taste
-Onion powder 1 tbs
-Zeera powder (Cumin powder) 1 tbs
-Sugar powdered 1 tsp
-Cayenne chilli pepper ½ tbs
-Himalayan pink salt 2 tsp or to taste
-Paprika powder 2 tbs
-Lehsan powder (Garlic powder) 1 & ½ tbs
-Dried oregano ½ tbs
Prepare Fajita Chicken:
-Boneless chicken fillets 500g
-Fajita seasoning ½ tbs
-Lemon juice 1-2 tbs
-Cooking oil 1-2 tbs
Prepare Mexican Corn Salad:
-Cream ¾ Cup
-Lemon juice 2 tbs
-Corn kernels boiled 2 Cups
-Pyaz (Onion) chopped ½ Cup
-Hari mirch (Green chilli) chopped 1-2
-Lehsan (Garlic) finely chopped 2 cloves
-Fajita seasoning 1 tsp
-Hara dhania (Fresh coriander) chopped handful
-Himalayan pink salt to taste
Prepare Stir Fried Vegetables:
-Cooking oil 1 tbs
-Pyaz (Onion) sliced 1 Cup
-Shimla mirch (Capsicum) julienne 1 Cup
-Yellow bell pepper julienne 1 Cup
-Tamatar (Tomato) deseeded & julienne 1 Cup
-Fajita seasoning to taste
Prepare Mexican Rice:
-Cooking oil 2-3 tbs
-Lehsan (Garlic) chopped 1 tsp
-Water 2-3 tbs
-Tomato paste 2 tbs
-Chicken powder ½ tbs
-Fajita seasoning 1 tbs
-Chawal (Rice) boiled 2 Cups
Directions:
Prepare Fajita Seasoning:
-In jar,add red chilli powder,onion powder,cumin powder,sugar,cayenne chilli pepper,pink salt, paprika powder,garlic powder,dried oregano & shake well.Fajita seasoning is ready!
Prepare Fajita Chicken:
-Cut chicken fillets from centre & use needle tenderizer or meat mallet.
-Add fajita seasoning,lemon juice,rub evenly & marinate for 30 minutes.
-On cast iron pan,add cooking oil & grill marinated chicken from both sides until done (4-5 minutes each side).
-Let it rest for few times & cut into slices.
Prepare Mexican Corn Salad:
-In a bowl,add cream,lemon juice,mix well & let it rest for 5 minutes.Sour cream is ready!
-Add corn kernels,onion,green chilli,garlic,fajita seasoning (1 tsp),fresh coriander,pink salt & mix well.
Prepare Stir Fried Vegetables:
-In a wok,add cooking oil,onion,capsicum,yellew bell pepper,tomato,fajita seasoning,stir fry for a minute & set aside.
Prepare Mexican Rice:
-In the same wok,add cooking oil,garlic & fry until golden.
-Add water,tomato paste,chicken powder,fajita seasoning (1 tbs),mix well & cook for a minute.
-Add rice & give it a good mix.
Assemble Fajita Platter:
-On platter,add Mexican rice,tortilla,cherry tomatoes,fresh parsley,sour cream,stir fried vegetables, cucumber,carrot,lemon,grilled fajita chicken,Mexican corn salad,lettuce leaves,tortilla,pickled cucumber, lemon slices & serve!

-Jar mein lal mirch powder,onion powder,zeera powder,cheeni,cayenne chilli pepper,pink salt, paprika powder,lehsan powder & dried oregano dal ker ache tarhan shake ker lein.Fajita seasoning tayyar hai.
Prepare Fajita Chicken:
-Chicken fillets ko centre mein sa cut ker lein aur meat mallet or needle tenderizer use karein.
-Fajita seasoning aur lemon juice dal ker ache tarhan rub karein aur 30 minutes kliya marinate ker lein.
-Cast iron pan mein cooking oil dal dein aur marinated chicken ko dono sides sa grill ker lein (4-5 minutes each side).
-Few minutes kliya rest dein aur slices mein cut ker lein.
Prepare Mexican Corn Salad:
-Bowl mein cream aur chicken dal ker ache tarhan mix ker lein aur 5 minute kliya chor dein.Sour cream tayyar hai.
-Corn kernels,pyaz,hari mirch,lehsan,fajita seasoning (1 tsp),hara dhania aur pink salt dal ker ache tarhan mix ker lein.
Prepare Stir Fried Vegetables:
-Karahi mein cooking oil,pyaz,shimla mirch,yellow bell pepper,tamatar aur fajita seasoning dal dein aur ek minute kliya stir fry ker lein & side per rakh dein.
Prepare Mexican Rice:
-Us he karahi mein cooking oil aur lehsan dal dein aur golden ho janay tak fry ker lein.
-Pani,tomato paste,chicken powder aur fajita seasoning (1 tbs) dal ker ache tarhan mix karein aur ek minute kliya paka lein.
-Chawal dal ker ache tarhan mix ker lein.
Assemble Fajita Platter:
-Platter mein Mexican rice,tortilla,cherry tomatoes,fresh parsley,sour cream,stir fried vegetables, cucumber,carrot,lemon,grilled fajita chicken,Mexican corn salad,lettuce leaves,tortilla,pickled cucumber & lemon slices dal ker serve karein!
