Ingredients:
-Chicken drumsticks 8-9 pieces (1 kg)
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Namak (Salt) ½ tsp or to taste
-Kali mirch powder (Black pepper powder) 1 tsp
-Lemon juice 1 & ½ tbs
-Chanay (Roasted gram) 3 tbs
-Hari mirch (Green chillies) 6-8
-Cheddar cheese grated 4 tbs (optional)
-Hara dhania (Fresh coriander) 2 tbs
-Water 3 tbs or as required
-Dahi (Yogurt) hung ½ Cup
-Lemon juice 2 tbs
-Zeera powder (Cumin powder) 1 tsp
-Haldi powder (Turmeric powder) ½ tsp
-Namak (Salt) ½ tsp or to taste
-Garam masala powder ½ tsp
-Cooking oil 2-3 tbs
-Koyla (Charcoal) for smoke
Directions:
-Remove tendons of chicken drumsticks & make deep cuts with the help of knife.
-In a bowl,add chicken drumsticks,ginger garlic paste,salt,black pepper powder,lemon juice & mix well,cover & marinate for 2 hours.
-On steamer grill,place marinated chicken drumsticks,cover & steam cook on medium flame for 4-5 minutes.
-Let it cool.
-In a spice mixer,add roasted gram,green chillies,cheddar cheese,fresh coriander,water & blend well.
-Take out in a bowl,add hung yogurt,lemon juice,cumin powder,turmeric powder,salt,garam masala powder & whisk well.
-Add steam cooked chicken drumsticks,coat well & marinate for 1 hour.
-In a frying pan,add cooking oil,marinated chicken,cover & cook on low flame for 3-4 minutes each side & turn sides in between & fire roast on direct flame until its charred from all sides.
-Give coal smoke for 2 minutes & serve!
Note:
-You can skip steam cooking if chicken drumsticks are small in size.

-Bowl mein chicken drumsticks,adrak lehsan paste,namak,kali mirch powder aur lemon juice dal ker ache tarhan mix karein aur dhak ker 2 hours kliya marinate ker lein.
-Steamer grill ker marinated chicken drumsticks rakh ker dhak dein aur darmiyani ancch per 4-5 minutes kliya steam cook ker lein.
-Thanda ker lein.
-Spice mixer mein chanay,hari mirchein,cheddar cheese,hara dhania aur pani dal ker ache tarhan blend ker lein.
-Bowl mein nikal lein,dahi,lemon juice,zeera,haldi powder,namak & garam masala powder dal ker ache tarhan whisk ker lein.
-Steam cooked chicken drumsticks dal ker ache tarhan coat ker lein aur 1 hour kliya marinate ker lein.
-Frying pan mein cooking oil aur marinated chicken dal ker dhak dein aur halki ancch per 3-4 minutes (each side) kliya paka lein aur bech mein sides ko change kerttay rahein & direct flame per tamam sides sa charred ho janay tak paka lein
-2 minute kliya koyla ka dhuwan dein & serve karein!
