Ingredients:
-Badam (Almonds) 12-14
-Kaju (Cashew nuts) 10-12
-Laung (Cloves) 4-5
-Hari elaichi (Green cardamom) 3
-Jaifil (Nutmeg) ½ piece
-Zeera (Cumin seeds) 2 tsp
-Javitri (Mace) 1 piece
-Safed til (Sesame seeds) 1 tbs
-Curry patta (Curry leaves) 10-12
-Mutton mix boti 750g
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Kacha papita (Raw papaya) paste 1 & ½ tbs
-Namak (Salt) 2 tsp or to taste
-Dahi (Yogurt) 1 Cup
-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tsp
-Haldi powder (Turmeric powder) ½ tsp
-Lal mirch powder (Red chilli powder) ½ tbs or to taste
-Dhania powder (Coriander powder) ½ tbs
-Tomato paste 2 tbs
-Kisan Super Cooking oil ½ Cup
-Pyaz (Onion) sliced 2 medium
-Hari mirch (Green chilli) chopped 1-2 tbs
-Water 1 Cup or as required
-Hari mirch (Green chillies) 4-5
-Hara dhania (Fresh coriander) chopped
-Hari mirch (Green chilli) sliced
-Adrak (Ginger) julienne
-Hara dhania (Fresh coriander) chopped
Directions:
-In a frying pan,add almonds,cashew nuts,cloves,green cardamom,nutmeg and dry roast for 1-2 minutes.
-Add cumin seeds,mace,sesame seeds,curry leaves and dry roast until fragrant.
-Let it cool.
-In a spice mixer,add roasted spices and grind to make powder & set aside.
-In a bowl,add mutton,ginger garlic paste,raw papaya paste,salt and mix well.
-Add yogurt,ground mixture,Kashmiri red chilli powder,turmeric powder,red chilli powder,coriander powder,tomato paste & mix well,cover and marinate for 2 hours.
-In a wok,add cooking oil,onion and fry until golden,take out & reserve for later use.
-Add green chilli & mix well.
-Add marinated mutton,mix well & cook on medium flame until oil separates (6-8 minutes).
-Add water,fried onion & mix well.
-Add green chillies,fresh coriander & mix well,cover & steam cook on low flame until mutton is tender (approx. 1 hour) then cook on high flame until oil separates.
-Garnish with green chilli,ginger,fresh coriander & serve!

-Zeera,javitri.safed til aur curry patta dal dein aur Khushbu anay tak dry roast ker lein.
-Thanda ker lein.
-Spice mixer mein roasted spices dal dein aur ache tarhan grind ker ka powder tayyar ker lein & side per rakh dein.
-Bowl mein mutton,adrak lehsan paste,kacha papita pasta aur namak dal ker ache tarhan mix ker lein.
-Dahi,ground mixture,Kashmiri lal mirch powder,haldi powder,lal mirch powder,dhania powder aur tomato paste dal ker ache tarhan mix karein aur dhak ker 2 hours kliya marinate ker lein.
-Karahi mein cooking oil aur pyaz dal dein aur golden ho janay tak fry ker lein & bad mein use kernay kliya side per rakhd ein.
-Hari mirch dal ker ache tarhan mix ker lein.
-Marinated mutton dal ker ache tarhan mix karein aur darmiyani ancch per oil alag ho janay tak paka lein (6-8 minutes).
-Pani aur fried pyaz dal ker ache tarhan mix karein.
-Hari mirch aur hara dhania dal ker ache tarhan mix karein aur dhak ker halki ancch per gosht gul janay tak steam cook ker lein (approx. 1 hour) phir tez ancch per oil alag ho janay tak paka lein.
-Hari mirch,adrak aur hara dhania sa garnish ker ka serve karein!
