-Baisan (Gram flour) sifted 4 Cups
-Himalayan pink salt 1 tsp or to taste
-Zeera (cumin seeds) roasted & crushed ¼ tsp
-Ajwain (Carom seeds) ¼ tsp
-Baking soda ½ tsp
-Water 2 & ¼ Cups or as required
-Cooking oil 2 tbs
-Cooking oil for frying
-Hot water as required
Prepare Imli ki Chutney:
-Sugar 2 tbs
-Lal mirch (Red chilli) crushed 1 tsp
-Saunf (Fennel seeds) crushed ½ tsp
-Kala namak (Black salt) 1/4 tsp
-Sonth (Dried ginger powder) ½ tsp
-Zeera (Cumin seeds) roasted & crushed ½ tsp
-Namak (Salt) ½ tsp or to taste
-Gur (Jaggery) 150g
-Imli pulp (Tamarind pulp) 1 Cup
Prepare Green Chutney:
-Podina (Mint leaves) ½ Cup
-Hara dhania (Fresh coriander) ½ Cup
-Lemon juice 2 tbs
-Water 2 tbs or as required
-Namak (Salt) 1/4 tsp or to taste
-Lehsan (Garlic) cloves 2
-Hari mirch (Green chilli) 2-3
Prepare Phulki Channa Chaat:
-Safed chanay (Chickpeas) boiled
-Chaat masala
-Pyaz (Onion) sliced
-Tamatar (Tomato) chopped
-Hari mirch (Green chilli) chopped
-Dahi (Yogurt) whisked
-Green chutney to taste
-Imli ki chutney to taste
-Lal mirch (Red chilli) crushed to taste
-Papdi
-Nimco sev
Directions:
-In a bowl,add gram flour,pink salt,cumin seeds,carom seeds,baking soda,gradually add water & whisk until thick consistency & continue whisking for 8-10 minutes or until batter is fluffy.
-Add cooking oil & whisk until well combined.
-In a wok,heat cooking oil & fry on low flame until golden.
-Take out & let it rest for 10 minutes.
-Fry again until they are crispy & golden brown.
-Let them cool completely.
How to Store Phulkiyan:
-You can store fried phulkiyan in a zip lock bag for up to 3 weeks in freezer or 2 weeks in refrigerator.
-In a bowl,add hot water,fried phulki,cover & let them soak until soft then take out from water and squeeze gently to remove excess water & set aside.
How to Use Stored Phulkiyan:
-Soak refrigerated phulki in lukewarm water until soft.
-Soak frozen phulki in hot water until soft.
Prepare Imli ki Chutney:
-In blender,add sugar,red chilli crushed,fennel seeds,black salt,dried ginger powder,cumin seeds,salt, jaggery,tamarind pulp,blend well & set aside.
Prepare Green Chutney:
-In grinder,add mint leaves,fresh coriander,lemon juice,water,salt,garlic,green chilli,grind well & set aside.
Prepare Phulki Channa Chaat:
-In a serving dish,add soaked phulki,chickpeas,chaat masala,onion,tomato,green chilli,yogurt,green chutney,imli ki chutney,red chilli crushed,papdi,nimco sev & serve!

-Bowl mein baisan,pink salt,zeera,ajwain,baking soda aur thora thora ker ka pani shamil karein aur thick consistency ajanay tak ache tarhan whisk ker lein aur mazeed 8-10 minutes ya fluffy ho janay tak whisk kertay rahein.
-Cooking oil dal ker ache tarhan whisk ker lein.
-Karahi mein cooking oil garam karein aur halki ancch per golden ho janay tak fry ker lein.
-Bahir nikal lein aur 10 minutes kliya chor dein.
-Crispy & golden-brown ho janay tak dubara fry ker lein.
-Thanda ker lein.
How to Store Phulkiyan:
-Zip lock bag mein dal ker 3 weeks kliya freezer or 2 weeks kliya refrigerator mein store ker saktay han.
-Bowl mein garam pani aur fried phulki dal ker dhak dein aur soft ho janay tak soak ker lein phir nikal ker excess water ko squeeze ker lein & side per rakh dein.

-Grinder mein podina,hara dhania,lemon juice,pani,namak,lehsan aur hari mirch dal ker ache tarhan grind ker lein & side per rakh dein.
Prepare Phulki Channa Chaat:
-Serving dish mein soaked phulki,safed chanay,chaat masala,pyaz,tamatar,hari mirch,dahi,green chutney,imli ki chutney,lal mirch crushed,papdi & nimco sev dal ker serve karein.
