Ingredients:
-Bhindi (Okra) 400g
-Cooking oil 4-5 tbs
-Curry patta (Curry leaves) 12-15
-Pyaz (Onion) sliced 2 medium
-Lehsan (Garlic) crushed 1 tbs
-Water 4 tbs
-Kashmiri lal mirch (Kashmiri red chilli) powder 2 tsp
-Himalayan pink salt 1 tsp or to taste
-Sugar ½ tsp (Optional)
-Dhania powder (Coriander powder) 1 & ½ tsp
-Haldi powder (Turmeric powder) ½ tsp
-Lal mirch powder (Red chilli powder) 1 & ½ tsp or to taste
-Garam masala powder ½ tsp
-Zeera powder (Cumin powder) 1 tsp
-Kali mirch powder (Black pepper powder) ½ tsp
-Dahi (Yogurt) 1 & ½ Cup
-Hari mirch (Green chilli) crushed 2 tsp
-Baisan (Gram flour) roasted 2 tbs
-Hara dhania (Fresh coriander) chopped 1 tbs
-Hara dhania (Fresh coriander) chopped
Directions:
-Cut the lady finger in half-length wise & set aside.
-In a wok,add cooking oil & heat it.
-Add okra,mix well & fry on medium flame until light golden & crispy & set aside.
-In the same wok,add curry leaves,onion,garlic,mix well & sauté until translucent.
-Add water,kashmiri red chilli powder,pink salt,sugar,coriander powder,turmeric powder,red chilli powder,garam masala powder,cumin powder,black pepper powder,mix well & cook for 1-2 minutes.
-In yogurt,add green chilli,gram flour & whisk well.
-In a wok,add yogurt mixture & mix well,cover & cook on low flame for 6-8 minutes.
-Add fried okra & mix well.
-Add fresh coriander,cover & cook on low flame for 2-3 minutes.
-Garnish with fresh coriander & serve with boiled rice!

-Bhindi ko half-length wise mein cut ker lein & side per rakh dein.
-Karahi mein cooking oil dal ker garam ker lein.
-Bhindi dal ker ache tarhan mix karein aur darmiyani ancch per light golden & crispy ho janay tak fry ker lein & side per rakh dein.
-Us he karahi mein curry patta,pyaz aur lehsan dal ker ache tarhan mix ker lein aur translucent ho janya tak sauté ker lein.
-Pani,Kashmiri lal mirch powder,pink slat,cheeni,dhania powdet,haldi powder,lal mirch powder, garam masala powder,zeera powder aur kali mirch powder dal ker ache tarhan mix karein aur 1-2 miutes kliya paka lein.
-Dahi mein hari mirch aur baisan dal ker ache tarhan whisk ker lein.
-Karahi mein yogurt mixture dal ker ache tarhan mix ker lein aur dhak ker halki ancch per 6-8 minutes kiya paka lein.
-Fried okra dal ker ache tarhan mix ker lein.
-Hara dhania dal ker dhak dein aur halki ancch per 2-3 minutes kliya paka lein.
-Hara dhania sa garnish ker lein aur boiled chawal ka saath serve karein!
