Ingredients:
Prepare Aloo ki Tarkari:
- Cooking oil 2 tbs
- Raidana (Mustard seeds) ½ tsp
- Kalonji (Nigella seeds) ½ tsp
- Aalo (Potato cubes) & boiled 3 medium
- Lal mirch powder (Red chilli powder) ½ tsp or to taste
- Haldi powder (Turmeric powder) ½ tsp
- Namak (Salt) ½ tsp or to taste
- Zeera powder (Cumin powder) ½ tsp
- Zarda ka rang (Yellow food color) 1-2 pinch
- Water 1 Cup or as required
- Mix achar (Mixed pickle) 1 tbs
Prepare Daal Kachori:
- Mong daal (Yellow lentil) soaked ¼ Cup
- Masoor daal (Red lentil gram) soaked ¼ Cup
- Lal mirch powder (Red chilli) powder ½ tsp or to taste
- Namak (Salt) 1 tsp or to taste
- Garam masala powder ½ tsp
- Adrak lehsan paste (Ginger garlic paste) ½ tsp
- Water 1 Cup or as required
- Maida (All-purpose flour) sifted 2 & ½ Cups
- Sooji (Semolina) 1 tbs
- Namak (Salt) 1 & ½ tsp
- Cooking oil 2-3 tbs
- Lukewarm water 1 Cup or as required
- Cooking oil for frying
Directions:
Prepare Aloo ki Tarkari:
In a wok,add cooking oil,mustard seeds,nigella seeds & mix well.
Add boiled potatoes & mix well.
Add red chilli powder,turmeric powder,salt,cumin powder,yellow food color & mix well.
Add water,mix well & bring it to boil.
Add mixed pickle & mix well.
Turn off the flame and slightly mash potatoes with the help of the masher then mix well & set aside.
Prepare Daal Kachori:
In a saucepan,add yellow lentil,red lentil,red chilli powder,salt,garam masala powder,ginger garlic paste,water,mix well & bring it to boil,cover & cook on low flame until tender & dries up then mix & mash well with the help of masher.
Let it cool & set aside.
In a bowl,add all-purpose flour,semolina,salt & mix well.
Add cooking oil & mix well.
Gradually add lukewarm water & knead until soft dough is formed,cover & let it rest it for 20 minutes.
Knead dough again until smooth,take a small portion & with greased hands make a small ball & shape into a small bowl.
Take small quantity of lentil mixture and place in the center of the dough then fold & seal all edges to make a ball and roll out with the help of rolling pin (makes 14-15).
In a wok,heat cooking oil (160-170C) & fry kachori on medium flame from both sides until golden brown.
Serve daal kachori with aloo ki tarkari,mixed pickle & yogurt raita!

Karahi mein cooking oil,raidana aur kalonji dal ker ache tarhan mix karein.
Boiled aloo shamil akrein aur ache tarhan mix ker lein.
Lal mirch powder,haldi powder,namak,zeera powder aur zarda ka rang dal ker ache tarhan mix ker lein.
Pani dal ker mix karein aur ubal anay dein.
Mix achar dal ker ache tarhan mix ker lein.
Chulha bund ker dein aur masher ki madad sa aloo ko slightly mash ker lein phir ache tarhan mix karein & side per rakh dein.
Prepare Daal Kachori:
Saucepan mein mong daal,masoor daal,lal mirch powder,namak,garam masala powder,adrak lehsan paste aur pani dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur halki ancch per gul janay aur pani sukh janay tak paka lein phir masher ki madad sa ache tarhan mix aur mash ker lein.
Thanda ker lein & side per rakh dein.
Bowl mein maida,sooji aur namak dal ker ache tarhan mix karein.
Cooking oil dal ker ache tarhan mix ker lein.
Thora thora ker ka neem garam pani shamil karein aur ghond ker soft dough tayyar ker lein aur dhak ker 20 minutes kliya rakh dein.
Dough ko smooth hunay tak dubara ghond lein,chota portion lein aur haaton ko grease ker ka small bowl bana lein.
Daal mixture ki small quantity lein aur dough ka center mein rakh dein aur edges ko fold ker lein aur seal ker ka ball bana lein phir rolling pin ki madad sa bail lein (makes 14-15).
Karahi mein cooking oil (160-170C) garam karein aur kachori ko darmiyani ancch per dono sides sa golden brown huany tak fry ker lein.
Daal kachori ko aloo ki tarkari,mixed achar aur raita ka saath serve karein!
