Ingredients:
Kabab (Patty):
- Pani (Water) as required
- Chanay ki daal (Split bengal gram) ¾ cup
- Adrak (Ginger) ½ inch
- Haldee powder (Turmeric powder) 1 pinch
- Laung (Cloves) 3-4
- Sabut lal mirch (Button red chilies) 3-4
- Darchini (Cinnamon stick) 1 Small
- Kali mirch sabut (Black peppercorn) 3-4
- Zeera (Cumin seeds) ½ tsp
- Aalo (Potatoes) Boiled 3-4 medium
- Namak (Salt) 1 tsp or to taste
- Pyaz (Onion) Chopped ¼ cup
- Podina (Mint leaves) Chopped 1 tbs
- Hari mirch (Green chili) Chopped 2-3 tbs or to taste
- Hara dhania (Greesn coriander) Chopped ¼ cup
- Chaat Masala ½ tsp
- Anda (Egg) 1
Bunkabab Chutney:
- Lehsan (Garlic) 2 cloves
- Namak (Salt) ½ tsp
- Chaat masala ½ tsp
- Hari mirch (Green chili) 1
- Lemon Juice 1 tsp
- Imli ka pulp (Tamarind pulp) ¼ cup
- Dahi (Yogurt) ½ cup
- Podina (Mint leaves) Handful
- Hara dhania (Green coriander) Handful
Assembling:
- Oil for frying
- Anday (Eggs) 2
- Buns 6
- Bunkabab Chutney
- Kabab (Patty)
- Pyaz (Onion) Sliced
- Tamatar (Tomato) Slices
- Band gobhi (Cabbage) shredded
Directions:
For Kabab (Patty):
In pot,add water,split bengal garam,ginger,turmeric powder,cloves,button red chilies,cinnamon stick,black peppercorns,cumin seeds and boil until lentil (daal) is tender and water is evaporated,let it cool.
In chopper,add bengal gram mixture,grind until well combine and refrigerate for 10-15 minutes.
In bowl, mash potatoes well then add salt,onion,mint leaves,green coriander,chaat masala,egg.
Add lentil/Daal mixture and mix well.
Make 6 kababs (patty) with your hands.
For Bunkabab Chutney:
In grinder,add garlic,salt,chaat masala,green chili,lemon juice,tamarind pulp,yogurt,mint leaves and green coriander,grind until well combined and set aside.
For Assembling:
Heat griddle,add oil and beat eggs well until foamy,dip kabab (patty) in beaten eggs and fry from both sides.
Toast the buns,spread bunkabab chutney,add onion,tomato,fried kabab (patty),cabbage and cover with the top bun,again fry bun kabab,serve with chutney and ketchup.

Directions:
For Kabab (Patty): Pot mein pani,chanay ki daal,adrak,haldee powder,laung,sabut lal mirch,darchini,kali mirch sabut,zeera dal ker daal gulnay aur pani sukh janay tak paka lein aur thanda ker lein.
Chopper mein chanay ki daal ka mixture dal ker ache tarhan grind ker lein aur 10-15 minute kliya refrigerate ker lein.
Bowl mein aalo ko mash ker lein,namak,pyaz,podina,hara dhania,chaat masala aur anda dal dein.
Daal ka mixture dal ker ache tarhan mix ker lein.
Haathon ki madad sa 6 kakab (patty) bana lein.
Tawa garam ker ka oil dal dein,patty/kabab ko anday mein dip ker ka dono sides sa fry ker lein.
For Bunkabab Chutney:
Grinder mein lehsan,namak,chaat masala,hari mirch,lemon juice,imli ka pulp,dahi,podina aur hara dhania dal ker ache tarhan grind ker lein aur side per rakh dein.
For Assembling:
Tawa garam ker ka oil dal dein aur anday ko foamy beat ker lein,kabab (patty) ko anday mein dip ker ka dono sides sa fry ker lein.
Buns ko toast ker lein,bunkabab chutney laga ker pyaz,tamatar,fried kabab (patty),bund gobhi rakh ker upper sa bun rakh dein,bun kabab ko dubara fry ker lein,chutney aur ketchup ka saath serve karein.
