Ingredients:
- Pani (Water) as required
- Matar (Peas) ½ Cup
- Gajar (Carrot) julienne ½ Cup
- Bund gobhi (Cabbage) ½ Cup
- Chukandar (Beet root) julienne ½ Cup
- Aloo (Potatoes) boiled ½ kg
- Shimla mirch (Capsicum) chopped 2 tbs
- Hara pyaz (Green onion) chopped 1/4 Cup
- Hari mirch (Green chili) chopped 2 tbs
- Lehsan paste (Garlic paste) ½ tbs
- Podina (Mint leaves) chopped 2-3 tbs
- Hara dhania (Fresh coriander) chopped 2-3 tbs
- Knorr chicken powder 1 sachet
- Garam masala powder 1 tsp
- Lal mirch (Red chili) crushed 1 tsp
- Zeera (Cumin seeds) roasted & crushed 1 tsp
- Namak (Salt) ½ tsp or to taste
- Lal mirch powder (Red chili powder) 1 tsp or to taste
- Dhania powder (Coriander powder) 1 tsp
- Samosa/Manda patti as required
- Maida (All-purpose flour) ½ Cup
- Pani (Water) 1/4 Cup or as required
- Cooking oil for frying
Directions:
In pot,add water,place strainer and heat it.
Add peas,carrots and boil for 3-4 minutes.
Add cabbage and boil for 1 minute,strain and let it cool down (pat dry completely).
Add beet root and boil for 1 minute,strain and let it cool down (pat dry completely).
In bowl,add potatoes and mash well with the help of the masher.
Add boiled vegetables,capsicum,green onion,green chili,garlic paste,mint leaves,fresh coriander,chicken powder,garam masala powder,red chili crushed,cumin powder,salt,red chili powder,coriander powder and mix well.
Add boiled beet root and give it a good mix & set aside.
In chopper,add samosa/manda patti and chop well & take out in a bowl.
In bowl,add all-purpose flour,water and mix well.
Grease hands with oil,taka a mixture and make cutlets of equal sizes then dip into all-purpose flour paste and coat in crumbled samosa/manda patti (makes 16-18).
In frying pan,add cooking oil and fry cutlets until golden brown.
In air fryer machine,place vegetable cutlets,grease with cooking oil and air fry at 200 C for 20 minutes.

Directions:
Pot mein pani dal ker strainer rakh dein aur pani ko garam ker lein.
Matar aur gajar dal ker 3-4 minutes kliya boil ker lein.
Bund gobhi dal ker 1 minute kliya boil ker lein phir strain ker ka thanda ker lein (pat dry completely).
Chukandar dal ker 1 minute kliya boil ker lein phir strain ker ka thanda ker lein (pat dry completely).
Bowl mein aloo dal ker ache tarhan masher ki madad sa mash ker lein.
Boiled vegetables,shimla mirch,hara pyaz,hari mirch,lehsan paste,podina,hara dhania,chicken powder, garam masala powder,lal mirch crushed,zeera powder,namak,lal mirch powder aur dhania powder dal ker ache tarhan mix ker lein.
Boiled chukandar dal ker mix ker lein & side per rakh dein.
Chopper mein samosa/manda patti dal dein aur ache tarhan chop ker lein & bowl mein nikal lein.
Bowl mein maida aur pani dal ker ache tarhan mix ker lein.
Haathon ko oil sa grease karein aur mixture ko la ker ek jaisay sizes ka cutlets tayyar ker lein phir maida ka paste mein dip karein aur crumbled samosa/manda patti mein coat ker lein (makes 16-18).
Frying pan mein cooking oil dal dein aur cutlets ko golden brown hunay tak fry ker lein.
Air fryer machine mein vegetable cutlets rakh dein aur 200 C per 20 minutes kliya air fry ker lein.
