Ingredients:
Crispy Aloo Puri:
- Maida (All-purpose flour) sifted 2 & ½ Cups
- Cornflour ¼ Cup
- Chawal ka atta (Rice flour) ¼ Cup
- Lal mirch powder (Red chilli powder) 1 tsp or to taste
- Namak (Salt) 1 & ½ tsp or to taste
- Ajwain (Carom seeds) ½ tsp
- Hara dhania (Fresh coriander) chopped 1-2 tbs
- Aloo (Potatoes) peeled & boiled 250g/2 large
- Water ½ Cup or as required
- Maida (All-purpose flour) sifted 3-4 tbs
- Kisan sunflower cooking oil 1 tsp
- Kisan Sunflower Cooking oil
- Kisan Sunflower Cooking oil for frying
- Hara dhania (Fresh coriander) chopped
Achari Aloo ki Tarkari:
- Kisan Sunflower Cooking oil ¼ Cup
- Methi dana (Fenugreek seeds) crushed ½ tsp
- Rai dana (Mustard seeds) ½ tsp
- Kalonji (Nigella seeds) ½ tsp
- Zeera (Cumin seeds) 1 tsp
- Saunf (Fennel seeds) crushed 1 tsp
- Kashmiri lal mirch powder (Kashmiri red chilli powder) 1 tsp
- Haldi powder (Turmeric powder) ½ tsp
- Adrak lehsan paste (Ginger garlic paste) ½ tbs
- Aloo (Potatoes) peeled & boiled 500g/4 large
- Namak (Salt) 1 & ½ tsp or to taste
- Zeera powder (Cumin seeds) ½ tsp
- Lal mirch (Red chilli) crushed 1 & ½ tsp
- Water 1 & ½ Cup or as required
- Imli pulp (Tamarind pulp) 3 tbs
- Garam masala powder ¼ tsp
- Hara dhania (Fresh coriander) chopped 1 tbs
Directions:
Perpare Crispy Aloo Puri:
In a bowl add all-purpose flour,cornflour,rice flour,red chilli powder,salt,carom seeds,fresh coriander & mix well.
Grate boiled potatoes with the help of grater & mix well.
Gradually add water & knead until dough is formed.
Grease dough with cooking oil,cover & let it rest for 5 minutes.
Sprinkle all-purpose flour & knead dough again until smooth.
Grease dough with cooking oil,take a small ball (60g),grease hands with cooking oil & spread the dough with the help of hand then roll out with the help of rolling pin.
In a wok,add cooking oil,heat it (170C) and fry on medium flame until it puffs up & golden (makes 14).
Prepare Achari Aloo ki Tarkari:
In a pot,add cooking oil,fenugreek seeds,mustard seeds,nigella seeds,cumin seeds,fennel seeds & mix well.
Turn off the flame,add Kashmiri red chilli powder,turmeric powder & mix well.
Add ginger garlic paste,turn on the flame & mix well on low flame.
Add potatoes and mash coarsely with the help of masher & mix well.
Add salt,cumin powder,red chilli crushed,mix well & cook for a minute.
Add water,mix well & bring it to boil,cover & cook on medium flame for 3-4 minutes.
Add tamarind pulp,mix well & cook for 2 minutes.
Add garam masala powder,fresh coriander,cover & simmer on low flame for a minute.
Garnish with fresh coriander & serve!
Serve achari aloo ki tarkari with crispy aloo puri.

Directions:
Perpare Crispy Aloo Puri:
Bowl mein maida,cornflour,chawal ka atta,lal mirch powder,namak,ajwain aur hara dhania dal ker ache tarhan karein.
Boiled aloo ko grater ki madad sa grate ker lein aur ache tarhan mix karein.
Thora thora ker ka pani shamil karein aur ghond ker dough tayyar ker lein.
Dough ko cooking oil sa grease karein aur dhak ker 5 minutes kliya chor dein.
Maida chirak dein aur dough ko smooth hunay tak dubara ghond lein.
Dough ko cooking oil sa grease karein,chota dough (60g) lein,haathon ko cooking oil sa grease karein aur dough ko haath ki madad sa pheela lein phir rolling pin ki madad sa bail lein.
Karahi mein cooking oil dal ker garam (170C) karein aur darmiyani ancch per aloo puri ko puffs up aur golden ho janay tak fry ker lein (makes 14).
Prepare Achari Aloo ki Tarkari:
Pot mein cooking oil,methi dana,rai dana,kalonji,zeera aur saunf dal ker ache tarhan mix ker lein.
Chulha bund ker dein,kashimiri lal mirch powder aur haldi powder dal ker ache tarhan mix karein.
Adrak lehsan paste dal dein,chulha on karein aur halki ancch per ache tarhan mix ker lein.
Aloo dal dein aur masher ki madad sa coarsely mash ker lein aur ache tarhan mix karein.
Namak,zeera aur lal mirch crushed dal ker ache tarhan mix karein aur ek minute kliya paka lein.
Pani dal ker ache tarhan mix karein aur ubal anay ka bad darmiyani ancch per 3-4 minutes kliya paka lein.
Imli pulp dal ker ache tarhan mix karein aur 2 minutes kliya paka lein.
Garam masala powder aur hara dhania dal ker dhak dein aur ek kliya halki ancch per dum per rakh dein.
