Ingredients:
Prepare Chicken Dumplings:
-Boneless chicken 250g
-Gajar (Carrot) finely chopped 2 tbs
-Adrak (Ginger) finely chopped 2 tsp
-Himalayan pink salt ¼ tsp or to taste
-Safed mirch powder (White pepper powder) ¼ tsp
-Kali mirch powder (Black pepper powder) 1 tsp
-Soy sauce 1 & ½ tbs
-Hara pyaz (Spring onion) chopped 2 tbs
-Water 2-3 tbs
-Maida (All-purpose flour) 2 Cups
-Himalayan pink salt ½ tsp
-Water ½ Cup or as required
Prepare Creamy Soup:
-Makhan (Butter) 3 tbs
-Cooking oil 1 tbs
-Maida (All-purpose flour) 3 tbs
-Chicken yakhni (Stock) 6 Cups substitute: add 2 chicken stock cubes in 6 Cups of water
-Gajar (Carrots) chopped ¼ Cup
-Corn kernels boiled & chopped 3 tbs
-Himalayan pink salt 1 tsp or to taste
-Lehsan powder (Garlic powder) 1 & ½ tsp
-Kali mirch (Black pepper) crushed 1 tsp
-Onion powder 1 & ½ tsp
-Safed mirch powder (White pepper powder) ½ tsp
-Olper’s Cream 1 Cup (room temperature)
-Fresh parsley chopped 1 tbs
-Hara pyaz (Spring onion) leaves chopped
-Kali mirch (Black pepper) crushed
Directions:
Prepare Chicken Dumplings:
-In a chopper,add chicken & chop well.
-Take out in a bowl,add carrot,ginger,pink salt,white pepper powder,black pepper powder,soy sauce, spring onion & mix until well combined.
-Gradually add water,mix well & set aside.
-In a bowl,add all-purpose flour,pink salt & mix well.
-Gradually add water,mix well & knead until hard dough is formed,cover with cling film & let it rest for 30 minutes.
-Remove the dough from cling film & knead it with the help of your palm (3-4 minutes),cover in cling film & let it rest for 15 minutes.
-Knead again with wet hands until dough is firmed.
-Take a small dough (14g),make a ball & roll out into thin sheet with the help of rolling pin (sprinkle cornflour while rolling,if required).
-Place 1 tbs of prepared filling in the center,apply water on the edges & fold it into semi-circle.
-Apply water on both corners of the dough,join the ends & press to seal it (makes 15).
-These dumplings can be stored in an airtight container for up to 1 month in freezer.
Prepare Creamy Soup:
-In a pot,add butter,cooking oil & let it melt.
-Add all-purpose flour & mix well for a minute.
-Add chicken stock,mix well & bring it to boil.
-Add carrots,corn kernels,pink salt,garlic powder,black pepper crushed,onion powder,white pepper powder & mix well.
-Add prepared dumplings,cover & cook on low flame for 6-8 minutes.
-Turn off the flame.
-In a bowl,add cream,add 1-2 Cups of soup gradually in the cream, mix well & add to the pot.It will prevent curdling of cream in soup.
-Now pour all the mixture in a pot,turn on the flame,mix well & cook on low flame for 1-2 minutes.
-Add fresh parsley & mix well.
-Garnish with spring onion leaves,black pepper crushed & serve hot!
