Ingredients:
Prepare Dough:
- Atta (Wheat flour) sifted 2 Cups
- Maida (All-purpose flour) sifted 1 Cup
- Namak (Salt) 1 & ½ tsp
- Baking soda 1 & ½ tsp
- Sugar powdered 1 tbs
- Ghee (Clarified butter) 3 tbs or as required
- Dahi (Yogurt) whisked 4 tbs
- Lukewarm water 1 Cup or as required
Prepare Potato Filling:
- Aalo (Potatoes) boiled 4 medium
- Pyaz (Onion) chopped 1 medium
- Hari mirch (Green chillies) chopped 3
- Hara dhania (Fresh coriander) chopped 2 tbs
- Namak (Salt) 1 tsp or to taste
- Lal mirch powder (Red chilli powder) 1 & ½ tsp or to taste
- Sabut dhania (Coriander seeds) crushed ½ tbs
- Garam masala powder ½ tsp
- Lal mirch (Red chilli) crushed 1 tsp
- Ajwain (Carom seeds) ½ tsp
- Anar dana (Dried pomegranate seeds) crushed 1 tbs
- Lemon juice 1 & ½ tbs
- Ghee (Clarified butter) melted 2-3 tbs or as required
- Maida (All-purpose flour)
- Salty water
- Makhan (Butter)
- Hara dhania (Fresh coriander)
Directions:
Prepare Dough:
In a bowl,add wheat flour,all-purpose flour,salt,baking soda,sugar & mix well.
Add clarified butter & mix well.
Add yogurt and mix well until it crumbles.
Gradually add lukewarm water & knead until soft dough is formed.
Grease dough with ghee,cover & let it rest for 1 hour (warm place).
Prepare Potato Filling:
In a bowl,grated potatoes with the help of the grater.
Add onion,green chillies,fresh coriander,salt,red chilli powder,coriander seeds,garam masala powder,red chilli crushed,carom seeds,dried pomegranate seeds,lemon juice,mix well & set aside.
Knead dough again until smooth (3-4 minutes).
Sprinkle dry flour & divide into 2 portions.
Sprinkle dry flour & roll out with the help of rolling pin.
Add & spread clarified butter with the help of brush,sprinkle dry flour & roll out the dough.
Sprinkle dry flour and divide the rolled dough in 3 parts.
Take one part,sprinkle dry flour,press & spread it with the help of hands and roll out with the help of rolling pin.
Add prepared potato filling (1-2 tbs) in the center,lift up all the edges,press and seal the filling & make a dough ball.
Sprinkle dry flour & roll out dough with the help of rolling pin.
Apply salt water on one side of naan with the help of the brush.
Heat griddle,place naan (wet side down) & cook on low flame until it starts bubble & bottom turns brown then flip the griddle and cook other side directly on the flame until it is charred (makes 6).
Apply butter and sprinkle fresh coriander & serve with raita!

Bowl mein atta,maida,namak,baking soda aur cheeni dal ker ache tarhan mix ker lein.
Ghee dal ker ache tarhan mix karein.
Dahi dal dein aur crumble hunay tak ache tarhan mix ker lein.
Thora thora ker ka neem garam pani shamil karein aur soft dough goondh lein.
Dough ko ghee sa grease karein aur dhak ker 1 hour k liye garam jagah per rakh dein
Prepare Potato Filling:
Bowl mein aalo ko grater ki madad sa grate ker lein.
Pyaz,hari mirch,hara dhania,namak,lal mirch powder,dhania powder,garam masala powder,lal mirch crushed,ajwain,anar dana aur lemon juice dal ker ache tarhan mix karein & side per rakh dein.
Dough ko smooth hunay tak dubara ghond lein (3-4 minutes).
Maida chirak dein aur dough ko 2 portions mein divide ker lein.
Maida chirak dein aur rolling pin ki madad sa bail lein.
Ghee dal ker brush ki madad sa pheela lein,maida chirak dein aur dough ko roll ker lein.
Maida chirak dein aur rolled dough ko 3 parts mein divide ker lein.
Ek part lein,maida chirak dein aur haath ki madad sa press ker ka spread ker lein aur rolling pin ki madad sa bail lein.
Dough ka center mein tayyar aalo ki filling (1-2 tbs) dal dein,edges ko lift up ker ka filling ko seal ker lein aur dough ball bana lein.
Maida chirak dein aur rolling pin ki madad sa bail lein.
Naan ki aik side par salt water ko brush ki madad sa laga lein.
Tawa garam karein aur naan (wet side down) ko halki ancch per paka lein yahan tak ka bubbles ajayen aur bottom se brown ho jaye phir tawa ko flip karein aur dusri side ko directly chulay per brown or charred hunay tak paka lein (makes 6).
Makhan laga ker hara dhania chirak dein aur raita ka saath serve karein!
