Chicken Wings with Kare-Kare Fusion Sauce

Ingredients:

Prepare Crispy Chicken Wings:

-Chicken wings with skin 750g

-Paprika powder ½ tbs

-Lehsan powder (Garlic powder) ½ tbs

-Baking powder 1 tsp

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Onion powder ½ tbs

-Himalayan pink salt 1 tsp or to taste

-Mustard powder 1 tsp

-Maida (All-purpose flour) 3 tbs

-Cornflour 2 tbs

-Water 2-3 tbs or as required

-Maida (All-purpose flour) 1 Cup

-Cornflour ¾ Cup

-Cooking oil for frying

Prepare Kare-Kare Fusion Sauce:

-Cooking oil 1 tbs

-Makhan (Butter) 2 tbs

-Pyaz (Onion) chopped 1 small

-Lehsan (Garlic) chopped 2 tbs

-Paprika powder 1 tsp (Substitute of Annatto powder)

-Kali mirch powder (Black pepper powder) ¼ tsp

-Himalayan pink salt 1 pinch or to taste

-Peanut butter 3 tbs

-Fish sauce 1 tbs (Substitute of Shrimp paste)

-Stock 1 & ½ Cup

-Chawal ka atta (Rice flour) 1 & ½ tbs

-Water 1-2 tbs

 

Directions:

Prepare Crispy Chicken Wings:

-In a bowl,add chicken wings,paprika powder,garlic powder,baking powder,red chilli powder,onion powder,pink salt,mustard powder,all-purpose flour,cornflour,water & mix well,cover & marinate for 30 minutes.

-In a bowl,add all-purpose flour,cornflour & mix well.

-Now coat marinated chicken wings & dust off excess flour.

-In a wok,heat cooking oil & fry on low flame until golden & crispy.

Prepare Kare-Kare Fusion Sauce:

-In a saucepan,add cooking oil,butter & let it melt.

-Add onion,garlic & sauté for a minute.

-Add paprika powder,black pepper powder,pink salt & mix well.

-Turn off the flame,add peanut butter & fish sauce.

-Turn on the flame,mix well & cook for a minute.

-Add stock,mix well & bring it to boil.

-In a small bowl,add rice flour,water & mix well.

-Gradually add prepared rice slurry in saucepan,mix continuously & cook on low flame until sauce thickens.

-Serve chicken wings with kare-kare fusion sauce.
