Ingredients:
Prepare Chicken Roulade:
- Water as required
- Palak (Spinach) roughly chopped 1 & ½ Cup (250g)
- Cooking oil 3 tbs
- Pyaz (Onion) sliced 2 medium
- Lehsan (Garlic) chopped 1 & ½ tbs
- Gajar (Carrot) julienne ½ Cup
- Mong phali (Peanuts) roasted & chopped ¼ Cup
- Lal mirch crushed (Red chilli crushed) ½ tsp
- Namak (Salt) ½ tsp or to taste
- Kali mirch powder (Black pepper powder) ½ tsp
- Chicken fillets 4
- Water as required
- Cooking oil 2-3 tbs
Prepare Cheese Mushroom Sauce:
- Cooking oil 2 tbs
- Lehsan (Garlic) chopped 1 & ½ tbs
- Mushrooms chopped ½ Cup
- Maida (All-purpose flour) 2 tbs
- Olper’s Milk 1 & ½ Cup
- Kali mirch powder (Black pepper powder) ¼ tsp
- Namak (Salt) ½ tsp or to taste
- Dried oregano ½ tsp
- Cheddar cheese grated ½ Cup (100g)
Directions:
Prepare Chicken Roulade:
In a pot,add water & bring it to boil.
Add spinach & blanch for 3-4 minutes then strain & rinse with cold water & set aside.
In a wok,add cooking oil,onion and mix well.
Add garlic,mix well and sauté until onions are translucent.
Add carrots,blanched spinach,mix well and cook for 2-3 minutes.
Add peanuts,red chilli crushed,salt,black pepper powder,mix well and cook for 2 minutes & set aside.
On a clean cutting board,place chicken fillet and cut it from the center.
Place cling film and pound with the help of meat pounder.
Add & spread prepared stuffing on chicken fillet and tightly roll the chicken into a log & wrap the rolled chicken in butter paper,grab the ends of butter paper and roll to twist them (makes 4) & freeze for 30 minutes.
In a steamer,add water & heat it.
Place steam grill/rack and place chicken roulades on it,cover & steam cook on medium flame for 25-30 minutes.
Remove butter paper from stuffed chicken roulades.
In a frying pan,add cooking oil & fry chicken roulades on medium flame from all sides until golden then cut into slices & set aside.
Prepare Cheese Mushroom Sauce:
In a wok,add cooking oil,garlic and mix well.
Add mushrooms and sauté for 1-2 minutes.
Add all-purpose flour & mix well for a minute.
Add milk,whisk well and cook until sauce thickens.
Add black pepper powder,salt,dried oregano,cheddar cheese & mix well until cheese melts.
Drizzle cheese mushroom sauce on chicken roulades & serve with grilled vegetables & cheese sauce!

- Cheddar cheese grated ½ Cup (100g)
Directions:
Prepare Chicken Roulade:
Pot mein pani dal ker ubal lein.
Palak dal dein aur 3-4 minutes kliya blanch ker lein phir strain ker ka cold water sa rinse ker lein & side per rakh dein.
Karahi mein cooking oil aur pyaz dal ker ache tarhan mix karein.
Lehsan dal ker ache tarhan mix karein aur pyaz translucent hunay tak sauté ker lein.
Gajar & blanched palak dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
Mong phali,lal mirch crushed aur kali mirch powder dal ker ache tarhan mix karein aur 2 minutes kliya paka lein & side per rakh dein.
Clean cutting board per chicken fillet rakh ker center mein sa cut ker lein.
Cling film laga lein aur meat pounder ki madad sa pound ker lein.
Chicken fillet per tayyar stuffing dal ker pheela lein aur chicken to tightly roll ker la log bana lein aur butter paper mein warp ker lein aur butter paper ki dono ends ko twist ler lein (makes 4) & 30 minutes kliya freeze ker lein.
Steamer mein pani dal ker garam karein.
Stream grill/rack rakh ker chicken roulades rakh dein aur dhak ker darmiyani ancch per 25-30 minutes kliya steam cook ker lein.
Stuffed chicken roulades per sa butter paper ko nikal lein.
Frying pan mein cooking oil dal dein aur chicken roulades ko darmiyani ancch per tamam sides sa golden ho janay tak fry ker lein phir slices mein cut ker lein & side per rakh dein.
Prepare Cheese Muhsroom Sauce:
Karahi mein cooking oil aur lehsan dal ker ache tarhan mix karein.
Mushrooms dal ker 1-2 minutes kliya saute ker lein.
Maida dal ker ek minute kliya ache tarhan mix karein.
Doodh dal ker ache tarhan whisk karein aur sauce garha ho janay tak paka lein.
Kali mirch powder,namak,dried oregano aur cheddar cheese dal ker cheese melt ho janay tak ache tarhan mix ker lein.
Cheese sauce ko chicken roulades per drizzle karein,grilled vegetables & cheese mushroom sauce ka saath serve karein!
