Ingredients:
Prepare Resha Chicken Filling:
- Chicken fillets 350g
- Water 2 Cups or as required
- Namak (Salt) 1 tsp or to taste
- Cooking oil 2 tbs
- Adrak (Ginger) chopped ½ tbs
- Lal mirch powder (Red chilli powder) 1 & ½ tsp or to taste
- Haldi powder (Turmeric powder) 1 tsp
- Lehsan powder (Garlic powder) 1 tsp
- Sabut dhania (Coriander seeds) roasted & crushed 1 & ½ tsp
- Namak (Salt) ½ tsp or to taste
- Garam masala powder ½ tsp
- Tomato puree 1 & ½ tbs
- Hari mirch (Green chilli) finely chopped 1 tbs
- Hara dhania (Fresh coriander) chopped ½ Cup
- Cheddar cheese grated ½ Cup
- Mozzarella cheese grated ½ Cup
Prepare Naan Dough:
- Maida (All-purpose flour) sifted 2 Cups
- Sugar 1 tsp
- Khameer (Instant yeast) 1 & ½ tsp
- Baking powder ½ tsp
- Namak (Salt) 1 tsp
- Cooking oil 1 tbs
- Anda (Egg) 1
- Water warm ¾ Cup
- Doodh (Milk) warm ¼ Cup
- Til (Sesame seeds) black & white
- Makhan (Butter)
Directions:
Prepare Resha Chicken Filling:
In a saucepan,add chicken fillets,water,salt & mix well,bring it to boil & remove the scum,cover & cook on medium flame until chicken is tender (12-15 minutes).
Take out chicken filltes,let it cool and shred it with the of the hand and reserve stock for later use.
In a frying pan,add cooking,ginger & mix well.
Now add shredded chicken & mix well.
Add red chilli powder,turmeric powder,garlic powder,coriander seeds,salt,garam masala powder & mix well.
Add tomato puree,reserved chicken stock approx. ¼ cup,mix well & cook for 1-2 minutes.
Let it cool.
Add green chilli,fresh coriander,cheddar cheese,mozzarella cheese,mix well & set aside.
Prepare Naan Dough:
In a bowl,add all-purpose flour,sugar,instant yeast,baking powder,salt & mix well.
Add cooking oil,egg & mix well.
In a small jug,add warm water and milk and mix well.
Gradually add milk+water & knead until soft dough is formed.
Cover & let it rest for 1 & ½ hour.
Grease hands with oil,sprinkle dry flour & knead dough until smooth.
Divide dough into 3 equal parts.
Naan on Iron Griddle (Tawa):
Take one part,sprinkle dry flour,make a ball & flatten with the help of hands then roll the sides with the help of rolling pin.
Add prepared chicken resha filling 2 tbs in the center,pull the edges up,press & seal,sprinkle dry flour and roll out with the help of rolling pin.
Apply milk,sprinkle sesame seeds and press gently.
Now flip the naan & apply water with the help of the hands.
Heat the griddle,place naan (wet side down) and cook on low flame until it starts to bubble & bottom has browned then flip the griddle & cook other side directly on the flame until it turns brown or charred.
Apply butter on top side & serve!
Naan Baking in Oven:
Take one part,sprinkle dry flour,make a ball & flatten with the help of hands and roll the sides with the help of rolling pin.
Add prepared chicken resha filling 2 tbs in the center,pull the edges up,press & seal,sprinkle dry flour then roll out with the help of rolling pin.
Apply milk,sprinkle sesame seeds,press gently & add marks with the help of the fingers.
Dust dry flour on baking tray & place prepared naan.
Bake in preheated oven at 180 C for 18-20 minutes.

Saucepan mein chicken fillets,pani aur namak dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur darmiyani ancch per chicken gul janay tak paka lein (12-15 minutes).
Chicken fillets ko nikal ker thanda ker lein aur haath ki madad sa shred ker lein aur stock ko bad mein use kernay kliya side per rakh dein.
Frying pan mein cooking aur adrak dal ker ache tarhan mix karein.
Ab shredded chicken dal ker ache tarhan mix ker lein.
Lal mirch powder,haldi powder,lehsan powder,sabut dhania,namak aur garam masala powder dal ker ache tarhan mix ker lein.
Tomato puree aur reserved chicken stock ¼ cup dal ker ache tarhan mix karein aur 1-2 minutes kliya paka lein.
Thanda ker lein.
Hari mirch,hara dhania,cheddar cheese aur mozzarella cheese dal ker ache tarhan mix kariein & side per rakh dein.
Prepare Naan Dough:
Bowl mein maida,cheeni,khameer,baking powder aur namak dal ker ache tarhan mix ker lein.
Cooking oil aur anda dal ker ache tarhan mix karein.
Chotay jug mein neem garam pani aur doodh dal ker mix karein.
Thora thora ker ka doodh+pani shamil karein aur ghond ker soft dough tayyar ker lein.
Dhak dein aur 1 & ½ hour kliya rakh dein.
Haathon ko oil sa grease karein,maida chirak dein aur dough ko smooth hunay tak ghond lein.
Dough ko 3 equal parts mein divide ker lein.

Tayyar chicken resha filling 2 tbs ko dough ka center mein dal dein aur edges ko pull ker ka press karein & seal ker lein,maida chirak dein aur rolling pin ki madad sa bail lein.
Doodh laga ker til chirak dein aur gently press ker lein.
Ab naan ko flip ker lein aur haath ki madad sa pani laga lein.
Tawa garam karein,naan (wet side down) rakh dein aur halki ancch per paka lein yahan tak ka bubbles ajayein aur bottom sa brown ho jayein phir tawa ko flip karein aur dosri side ko directly chulay per brown or charred hunay tak paka lein.
Makhan laga ker serve karein!
