Ingredients:
Prepare Chicken:
-Dahi (Yogurt) 3 tbs
-Hari mirch (Green chilli) paste 1 tsp
-Adrak lehsan paste (Ginger garlic paste) ½ tbs
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Dhania powder (Coriander powder) 1 tsp
-Namak (Salt) 1 tsp or to taste
-Baisan (Gram flour) roasted 1 tbs
-Garam masala powder 1 tsp
-Haldi powder (Turmeric powder) ½ tsp
-Zeera powder (Cumin powder) 1 tsp
-Zarda ka rang (Orange food color) ¼ tsp
-Boneless chicken cubes 500g
-Cooking oil 2-3 tbs
-Koyla (Charcoal) for smoke
Prepare Mayo Sauce:
-Dahi (Yogurt) 1 Cup
-Mayonnaise ½ Cup
-Lehsan paste (Garlic paste) 1 tsp
-Namak (Salt) ¼ tsp or to taste
Prepare Hari Chutney:
-Imli pulp (Tamarind pulp) 1 Cup
-Hari mirch (Green chillies) 3-4
-Sabut lal mirch (Button red chillies) 4-5
-Lehsan (Garlic) 3-4 cloves
-Namak (Salt) ¼ tsp or to taste
-Zeera (Cumin seeds) 1 tsp
-Hara dhania (Fresh coriander) ¾ Cup
-Podina (Mint leaves) 1 Cup
-Water ¼ Cup or as required
Assembling:
-Paratha
-Pyaz (Onion) rings
Directions:
Prepare Chicken:
-In a bowl,add yogurt,green chilli paste,ginger garlic paste,red chilli powder,coriander powder,salt, gram flour,garam masala powder,turmeric powder,cumin powder,orange food color & whisk well.
-Add chicken & mix well,cover & marinate for 30 minutes.
-In a frying pan,add cooking oil,marinated chicken & cook for 2-3 minutes,cover & cook on low flame until chicken is tender (12-15 minutes) then cook on high flame until it dries up.
-Give coal smoke for 2 minutes.
Prepare Mayo Sauce:
-In a bowl,add yogurt,mayonnaise,garlic paste,salt,whisk well & set aside.
Prepare Hari Chutney:
-In a blender jug,add tamarind pulp,green chillies,button red chillies,garlic,salt,cumin seeds,fresh coriander,mint leaves,water,blend well & set aside.
Assembling:
-On a paratha,add cooked chicken,prepared mayo sauce & hari chutney,onion rings,roll out paratha & wrap in butter paper (makes 7-8).

-Bowl mein dahi,hari mirch paste,adrak lehsan paste,lal mirch powder,dhania powder,namak,baisan, garam masala powder,haldi powder,zeera powder aur zarda ka rang dal ker ache tarhan whisk ker lein.
-Chicken dal ker ache tarhan mix karein aur dhak ker 30 minutes kliya marinate ker lein.
-Frying pan mein cooking oil aur marinated chicken dal dein aur 2-3 minutes kliya paka lein phir dhak ker halki ancch per chicken gul janay tak paka lein (12-15 minutes) phir tez ancch per sukh janay tak paka lein.
-2 minute kliya koyla ka dhuwan dein.
Prepare Mayo Sauce:
-Bowl mein dahi,mayonnaise,lehsan paste aur namak dal ker ache tarhan whisk ker lein & side per rakh dein.
Prepare Hari Chutney:
-Blender jug mein imli pulp.hari mirchein,sabut lal mirch,lehsan,nanamk,zeera,hara dhania,podina aur pani dal ker ache tarha blend ker lein lein & side per rakh dein.
Assembling:
-Paratha per cooked chicken,tayyar mayo sauce,hari chutney aur pyaz rings dal dein aur roll ker ka butter paper mein wrap ker lein (makes 7-8).
