Ingredients:
-Chicken tikka pieces 4
-Himalayan pink salt ½ tsp or to taste
-Adrak lehsan paste (Ginger garlic paste) ½ tbs
-Lemon juice 2 tbs
Prepare Angara Masala:
-Dahi (Yogurt) hung 4-5 tbs
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Hari mirch (Green chilli) crushed 1 tbs
-Kala namak (Black salt) ½ tsp
-Lal mirch (Red chilli) crushed 1 & ½ tsp
-Haldi powder (Turmeric powder) 1 tsp
-Garam masala powder ½ tsp
-Elaichi powder (Cardamom powder) ½ tsp
-Lal mirch powder (Red chilli powder) 1 & ½ tsp or to taste
-Saunf (Fennel seed) powder ½ tsp
-Kashmiri lal mirch (Kashmiri red chilli) powder 1 & ½ tbs
-Chaat masala 1 tsp
-Kasuri methi (Dried fenugreek leaves) 1 tsp
-Lemon juice 1 & ½ tbs
-Himalayan pink salt ¼ tsp or to taste
-Cooking oil 2 tbs
-Baisan (Gram flour) roasted 1 & ½ tbs
-Cooking oil 3-4 tbs
Prepare Dum Pulao:
-Cooking oil 4 tbs
-Pyaz (Onion) sliced 1 medium
-Lehsan (Garlic) chopped 1 tbs
-Zeera (Cumin seeds) 1 tsp
-Water ¼ Cup
-Chawal (Rice) Sella 500g (boiled until 80% done with salt)
-Koyla (Charcoal) for smoke
Directions:
-Make deep cuts on both sides of chicken pieces with the help of knife.
-In a bowl,add chicken pieces,pink salt,ginger garlic paste,lemon juice & rub well,cover & marinate for 30 minutes.
Prepare Angara Masala:
-In a bowl,add yogurt,ginger garlic paste,green chilli crushed,black salt,red chilli crushed,turmeric powder,garam masala powder,cardamom powder,red chilli powder,fennel seed powder,Kashmiri red chilli powder,chaat masala,dried fenugreek leaves,lemon juice,pink salt & mix well.
-Take out 2 tbs of prepared masala & reserve for later use.
-In remaining masala,add cooking oil,gram flour & mix well.
-In marinated chicken,add prepared angara masala,mix well,cover & marinate for 1 hour or overnight in refrigerator.
-On heated iron griddle,add cooking oil,marinated chicken,cover & cook on medium flame for 5-6 minutes.
-Flip chicken pieces,apply remaining marinade,cover & cook on medium flame for 4-5 minutes.
-Flip again,apply remaining marinade & cook until chicken is tender.
Prepare Dum Pulao:
-In a pot,add cooking oil,onion,garlic,cumin seeds & fry until light golden.
-Add 2 tbs of reserved angara masala & mix well.
-Add water,mix well & cook for a minute.
-Add boiled rice & spread evenly.
-Make holes with the back of wooden spoon.
-Place prepared chicken angara tikka pieces,cover & steam cook on low flame for 10-12 minutes.
-Give coal smoke for 2 minutes & serve!

-Bowl mein chicken pieces,pink salt,adrak lehsan paste aur lemon juice dal ker ache tarhan rub ker lein aur dhak ker 30 minutes kliya marinate ker lein.
Prepare Angara Masala:
-Bowl mein dahi,adrak lehsan paste,hari mirch crushed,kala namak,lal mirch crushed,haldi powder, garam masala powder,elaicihi powder,lal mirch powder,saunf powder,,Kashmiri lal mirch powder, chaat masala,kasuri methi,lemon juice & pink salt dal ker ache tarhan mix ker lein.
-2 tbs tayyar masala nikal ker bad mein use kernay kliya side per rakh dein.
-Remaining masala mein cooking oil aur baisan dal ker ache tarhan mix ker lein.
-Marinated chicken mein tayyar angara masala dal ker ache tarhan mix karein aur dhak ker 1 hour or overnight kliya refrigerator mein marinate ker lein.
-Garam iron tawa per cooking oil aur marinated chicken dal ker dhak dein aur darmiyani ancch per 5-6 minutes kliya paka lein.
-Chicken pieces per remaining marinade laga ker dhak dein aur darmiyani ancch per 4-5 minutes kliya paka lein.
-Dubara flip karein,remaining marinade laga lein aur chicken gul janay tak paka lein.
Prepare Dum Pulao:
-Pot mein cooking oil,pyaz,lehsan aur zeera dal ker light golden ho janay tak fry ker lein.
-2 tbs reserved angara masala dal ker ache tarhan mix karein.
-Pani dal ker ache tarhan mix karein aur ek minute kliya paka lein.
-Boiled chawal dal ker evenly pheela lein.
-Wooden spoon ki madad sa holes bana lein.
-Tayyar chicken angara tikka pieces rakh ker dhak dein aur halki ancch per 10-12 minutes kliya steam cook ker lein.
-2 minutes kliya koyla ka dhuwan dein & serve karein!
