Ingredients:
- Mutton leg 2 kg approx.
- Lehsan (Garlic) 8-10 cloves
- Adrak (Ginger) 2 inch piece
- Kacha papita (Raw papaya with skin) ½ Cup
- Hari mirch (Green chillies) 3-4
- Lemon juice ½ Cup
- Hara dhania (Fresh coriander) 1-2 tbs
- Podina (Mint leaves) 1-2 tbs
- Dahi (Yogurt) 1 Cup
- Lal mirch powder (Red chilli powder) 1 tbs or to taste
- Tikka masala 1 & ½ tbs
- Garam masala powder 1 tbs
- Zeera powder (Cumin powder) ½ tbs
- Haldi powder (Turmeric powder) 1 tsp
- Namak (Salt) 1 tbs or to taste
- Dhania powder (Coriander powder) 1 tbs
- Paprika powder 1 tbs
- Water as required
- Lal mirch (Red chilli) crushed ½ tbs
- Olive oil 2 tbs
Directions:
Clean mutton leg and trim extra fat.
Score the leg of mutton with a sharp knife,making deep cuts in crosses on both sides & set aside.
In spice mixer,add garlic,ginger,raw papaya,green chillies,lemon juice and blend to make a paste.
Add fresh coriander and mint leaves,blend again & set aside.
In a bowl,add yogurt,ground paste,red chilli powder,tikka masala,garam masala powder,turmeric powder,salt,coriander powder,paprika powder and whisk well.
In a bowl,add mutton leg,prepared marination and rub well on both sides,cover and marinate for 8 hours or overnight in refrigerator.
In a pot,add water,place steam rack and marinated mutton leg (reserve remaining marinate for later use),sprinkle red chilli crushed,cover and steam cook on low flame for 2 hours.
In frying pan,add olive oil,reserved marinade,mix well and cook on low flame for 4-5 minutes & set aside.
On baking tray,place steam cooked leg and apply prepared marinade.
Grill mutton leg in preheated oven at 200 C for 12-15 minutes or until golden brown color appears.

Mutton leg ko saaf ker ka extra fat ko remove ker lein.
Sharp knife ki madad sa mutton leg ko dono sides per deep cuts laga lein & side per rakh dein.
Spice mixer mein lehsan,adrak,kacha papita,hari mirch aur lemon juice dal dein aur ache tarhan blend ker ka paste tayyar ker lein.
Hara dhania aur podina dal ker dubara blend ker lein & side per rakh dein.
Bowl mein dahi,ground paste,lal mirch powder,tikka masala,garam masala powder,haldi powder, namak,dhnaia powder aur paprika powder dal ker ache tarhan whisk ker lein.
Bowl mein mutton leg,tayyar marination dal ker dono sides per evenly rub ker lein aur dhak ker 8 hours ya overnight kliya marinate ker lein.
Pot mein pani dal dein aur steam rack rakh ker marinated mutton leg rakh dein (baqi bache hoye marinate ko bad mein use kernay kliya side per rakh dein),lal mirch crushed sprinkle karein aur dhak ker halki ancch per 2 hours kliya steam cook ker lein.
Frying pan mein olive oil aur reserved marinade dal ker ache tarhan mix karein aur halki ancch per 4-5 minutes kliya paka lein & side per rakh dein.
Baking tray per steam cooked leg rakh dein aur tayyar marinada laga lein.
Mutton leg ko preheated oven mein 200 C per 12-15 minutes ya golden brown color anay tak grill ker lein.
