Ingredients:
Prepare Mong Daal Phulkiyan:
- Mong daal (Yellow lentil) 1 & ½ Cup (soaked for 30 minutes)
- Water ¼ Cup or as required
- Lal mirch powder (Red chilli powder) 1 tsp or to taste
- Zeera (Cumin seeds) roasted & crushed 1 tsp
- Kali mirch powder (Black pepper powder) ½ tsp
- Namak (Salt) 1 tsp or to taste
- Prepared hari chutney 2-3 tbs
- Cooking oil for frying
- Lukewarm water as required
Prepare Amchur ki Chutney:
- Cheeni (Sugar) 1 Cup
- Amchor powder (Mango powder) 1/3 Cup
- Saunf (Fennel seeds) crushed 1 tsp
- Chaat masala 1 tsp
- Zeera (Cumin seeds) roasted & crushed 1 tsp
- Kali mirch powder (Black pepper powder) ½ tsp
- Garam masala powder ½ tsp
- Kala namak (Black salt) ½ tsp
- Namak (Salt) ¼ tsp or to taste
- Lal mirch powder (Red chilli powder) 1 tsp or to taste
- Zarda ka rang (Yellow food color) 1-2 pinch
- Water 1 Cup or as required
Prepare Hari Chutney:
- Podina (Mint leaves) ½ Cup
- Hara dhania (Fresh coriander) ½ Cup
- Lehsan (Garlic) 4-5 cloves
- Hari mirch (Green chillies) 3-4
- Lemon juice 3 tbs
- Namak (Salt) ¼ tsp or to taste
- Nimco sev 1 & ½ tbs
- Water 2 tbs or as required
Assembling:
- Daal phulkiyan
- Dahi (Yogurt) whisked
- Tamatar (Tomato) chopped
- Pyaz (Onion) chopped
- Hara dhania (Fresh coriander) chopped
- Lal mirch (Red chilli) crushed
- Amchur ki chutney
- Hari chutney
- Dahi (Yogurt) whisked
- Tamatar (Tomato) chopped
- Papri
- Nimco Sev
- Hara dhania (Fresh coriander) chopped
- Lal mirch (Red chilli) crushed
Directions:
Prepare Daal Phulkiyan:
In a blender jar,add yellow lentil,water and blend well until smooth.
Take out in a bowl,add red chilli powder,cumin seeds,black pepper powder,salt,2-3 tbs prepared green chutney (reserve for later use) and mix continuously for 4-5 minutes.
In a wok,heat cooking oil and fry phulkiyan on medium flame until golden brown.
In a bowl,add lukewarm water,daal phulkiyan and let them soak for 30-40 minutes,take them out,press and squeeze excess water.
Prepare Amchur ki Chutney:
In a wok,add sugar,dried mango powder,fennel seeds,chaat masala,cumin seeds,black pepper powder, garam masala powder,black salt,salt,red chilli powder,yellow food colour,water,mix well and bring it to boil and cook on medium flame for 8-10 minutes and keep mixing in between.
Let it cool.
Can be stored in refrigerator for up to 1 month.
Prepare Hari Chutney:
In a spice mixer,add mint leaves,fresh coriander,garlic,green chillies,lemon juice,salt,nimco sev and water,blend well & set aside.
Assembling:
On a serving dish,add dumplings,yogurt,tomato,onion,fresh coriander,red chilli crushed,amchur ki chutney,hari chutney,yogurt,tomato,papri,nimco sev,fresh coriander,red chilli crushed & serve!

Directions:
Prepare Daal Phulkiyan:
Blender mein mong daal aur pani dal ker smooth hunay tak ache tarhan blend ker lein.
Bowl mein nikal lein,lal mirch powder,zeera,kali mirch powder,namak,2-3 tbs tayyar hari chutney (reserve for later use) dal ker 4-5 minutes kliya musalsal mix kertay rahein.
Karhai mein cooking oil garam karein aur phulkiyon ko darmiyani ancch per golden brown hunay tak fry ker lein.
Bowl mein neem garam pani aur daal phulkiyan dal dein aur 30-40 minutes kliya bhego dein phir nikal ker press aur squeeze ker lein.
Prepare Amchur ki Chutney:
Karhai mein cheeni,amchor powder,saunf,chaat masala,zeera,kali mirch powder,garam masala powder, kala namak,namak,lal mirch powder,zarda ka rang aur pani dal ker ache tarhan mix karein aur ubal anay ka bad darmiyani ancch per 8-10 minutes kliya paka lein aur bech bech mein chamcha chalatay rahein.
Thanda ker lein.
1 month tak refrigerator mein store ker saktay han.
Prepare Hari Chutney:
Spice mixer mein podina,hara dhania,lehsan,hari mirch,lemon juice,namak,nimco sev aur pani dal ker ache tarhan blend ker lein & side per rakh dein.
Assembling:
Serving dish mein daal phulkiyan,dahi,tamatar,pyaz,hara dhania,lal mirch crushed,amchur ki chutney, hari chutney,dahi,tamatar,papri,nimco sev,hara dhania aur lal mirch crushed dal ker serve karein!
