Ingredients:
Prepare Spice Mix:
- Namak (Salt) ½ tsp or to taste
- Dried parsley 1 tsp
- Tatri (Citric acid) ¼ tsp
- Lal mirch (Red chili) crushed 1 tsp
- Zeera powder (Cumin powder) 1 tsp
- Paprika powder 1 tsp
Prepare Buttermilk Masala Kebab:
- Beef undercut ½ kg
- Olper’s milk 2 & ½ Cups
- Lemon juice 3-4 tbs
- Lal mirch powder (Red chili powder) 2 tsp or to taste
- Dhania powder (Coriander powder) 1 tsp
- Kali mirch powder (Black pepper powder) 1 tsp
- Namak (Salt) 1 tsp or to taste
- Dried oregano 1 tbs
- Adrak lehsan paste (Ginger garlic paste) 1 tbs
- Cooking oil 1-2 tbs
Prepare Buttermilk Sauce:
- Cooking oil 1-2 tbs
- Maida (All-purpose flour) 1 & ½ tbs
- Hara dhania (Fresh coriander) chopped 1 tbs
Directions:
Prepare Spice Mix:
In mortal & pestle,add salt,dried parsley,citric acid & crush well.
Add red chilli crushed,cumin powder,paprika powder & mix well.Spice mix is ready!
Prepare Buttermilk Masala Kabab:
Cut thick slices of beef & pound with the help of meat mallet from both sides & set aside.
In a bowl,add milk,lemon juice & mix well,cover & let it rest for 10 minutes.Buttermilk is ready!
Add red chilli powder,coriander powder,black pepper powder,salt,dried oregano,ginger garlic paste & whisk well.
Add beef strips & dip properly,cover & marinate for 4 hours.
Thread marinated beef on wooden skewers & reserve buttermilk for later use.
On a griddle,add cooking oil & spread evenly.
Place beef skewers,sprinkle prepared spice mix,cover & cook on medium flame for 4-5 minutes then flip,sprinkle prepared spice mix,cover & cook for 4-5 minutes (makes 6-8).
Prepare Buttermilk Sauce:
In a saucepan,add cooking oil,all-purpose flour & mix well.
Now add prepared buttermilk & whisk well until sauce thickens.
Add fresh coriander & mix well.
On buttermilk masala kebab,sprinkle prepared spice mix & serve with prepared buttermilk sauce.

Beef ko thick slices mein cut ker lein aur meat mallet ki madad sa dono sides per pound ker lein & side per rakh dein.
Bowl mein doodh aur lemon juice dal ker ache tarhan mix karein aur dhak ker 10 minutes kliya chor dein.Buttermilk tayyar hai.
Lal mirch powder,dhania powder,kali mirch powder,namak,dried oregano aur adrak lehsan paste dal ker ache tarhan whisk ker lein.
Beef strips dal ker properly dip ker lein aur dhak ker 4 hours kliya marinate ker lein.
Wooden skewers per marinated beef laga lein aur buttermilk ko bad mein use kernay kliya reserve ker lein.
Tawa per cooking oil dal ker people lein.
Beef skewers rakh ker upper sa tayyar spice mix ko sprinkle ker lein aur dhak ker darmiyani ancch per 4-5 minutes kliya paka lein phir flip ker ka tayyar spice mix ko sprinkle ker lein aur dhak ker 4-5 minutes kliya paka lein (makes 6-8).
Prepare Buttermilk Sauce:
Saucepan mein cooking oil aur maida dal ker ache tarhan mix ker lein.
Ab tayyar buttermilk dal dein aur sauce garha ho janay tak ache tarhan whisk ker lein.
Hara dhania dal ker ache tarhan mix karein.
