Ingredients:
Prepare Chicken Dumpling Filling:
-Chicken qeema (Mince) 250g
-Hara pyaz (Spring onion) finely chopped 1 Cup
-Lehsan (Garlic) chopped 1 tsp
-Himalayan pink salt ½ tsp or to taste
-Zeera powder (Cumin powder) 1 tsp
-Haldi powder (Turmeric powder) ½ tsp
-Garam masala powder ½ tsp
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Water 3-4 tbs
Prepare Dough:
-Maida (All-purpose flour) 1 & ½ Cup
-Himalayan pink salt ½ tsp
-Water ½ Cup or as required
-Cooking oil 1 tbs
-Water 2-3 tbs or as required
Prepare Butter Chicken Sauce:
-Cooking oil 1-2 tbs
-Pyaz (Onion) 2 medium
-Tamatar (Tomatoes) 2 medium
-Lehsan (Garlic) 5-6 cloves
-Adrak (Ginger) ½ inch piece
-Sabut lal mirch (Button red chillies) 7-8
-Water ½ Cup or as required
-Cooking oil 1 tbs
-Makhan (Butter) 2 tbs
-Himalayan pink salt ½ tsp or to taste
-Garam masala powder ½ tsp
-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tsp
-Haldi powder (Turmeric powder) ½ tsp
-Dhania powder (Coriander powder) ½ tsp
-Kasuri methi (Dried fenugreek leaves) ¼ tsp
-Water ½ Cup or as required
-Olper’s Cream ½ Cup (room temperature)
-Koyla (Charcoal) for smoke
-Chilli oil
-Hara pyaz (Green onion) leaves chopped
Directions:
Prepare Chicken Dumpling Filling:
-In a bowl,add chicken mince,spring onion,garlic,pink salt,cumin powder,turmeric powder,garam masala powder,red chilli powder,water,mix well & set aside.
Prepare Dough:
-In a bowl,add all-purpose flour,pink salt & mix well.
-Gradually add water,mix well & knead until hard dough is formed.
-Knead dough for 2-3 minutes,cover with cling film & let it rest for 30 minutes.
-Remove cling film & knead dough for 2-3 minutes with the help of your palm,cover with cling film & let it rest 15 minutes more.
-Remove cling film & divide the dough in small portions.
-Take one portion,sprinkle cornflour & roll out with the help of rolling pin (thin sheet).
-With the help of 3-inch round cutter,cut circles of dough.
-On each dough,add prepared chicken dumpling filling,apply water on the edges,bring the edges together from the center than make folds on right side & press to seal the edges then rotate the dumpling,make folds on the other side & press to seal the edges to make a dumpling (makes 35-36).
-In a frying pan,add cooking oil,prepared dumplings & pan fry on low flame for 2-3 minutes.
-Add water,cover & steam cook on low flame for 6-8 minutes.
Prepare Butter Chicken Sauce:
-In a frying pan,add cooking oil,onion,tomatoes,garlic,ginger,button red chillies & sauté on medium flame for 2-3 minutes.
-Let it cool & transfer to a blending jug.
-Add water,blend well & set aside.
-In a frying pan,add cooking oil,butter & let it melt.
-Add blended mixture,mix well & cook on medium flame for 1-2 minutes.
-Add pink salt,garam masala powder,kashmiri red chilli powder,turmeric powder,coriander powder,dried fenugreek leaves & mix well.
-Add water & mix well,cover & cook on low flame until oil separates (4-5 minutes).
-Turn off the flame.
-In a bowl,add cream & gradually add ¼ cup of gravy & mix well to temper the cream.
-Add cream mixture in frying pan & mix well,turn on the flame & cook on low flame for 2-3 minutes.
-Turn off the flame & give coal smoke for 2 minutes.
-On serving plate,pour prepared butter chicken sauce,place prepared dumplings,pour chilli oil,green onion leaves & serve!
