Ingredients:
- Fauji fresh n freeze frozen Broccoli 500g
- Olive oil 2 tbs
- Pyaz (Onion) chopped 1 medium
- Zeera (Cumin seeds) ½ tbs
- Kary patta (Curry leaves) 10-12
- Hari mirch (Green chilli) chopped 2 tbs
- Adrak (Ginger) chopped 1 tbs
- Lal mirch powder (Red chilli powder) ½ tbs or to taste
- Haldi powder (Turmeric powder) ½ tsp
- Dhania powder (Coriander powder) ½ tbs
- Garam masala powder 1 tsp
- Namak (Salt) 1 tsp or to taste
- Lemon juice 3 tbs
- Hara dhania (Fresh coriander) chopped 2 tbs
- Atta (Whole wheat flour) sifted 2 & ½ Cups
- Namak (Salt) 1 tsp or to taste
- Water 1 Cup or as required
- Olive oil for 1-2 tbs
Directions:
Chop broccoli with the help of knife & set aside.
In a wok,add olive oil,onion & sauté until translucent.
Add cumin seeds & mix well.
Add curry leaves and mix well.
Add green chilli,ginger,mix well & cook for 2 minutes.
Add red chilli powder,turmeric powder,coriander powder,garam masala powder,salt and mix well.
Now add broccoli chopped,mix well and cook for 2-3 minutes.
Add lemon juice and mix well,cover & cook on low flame for 12-15 minutes or until tender.
Add fresh coriander,mix & mash with the help of masher and set aside.
In a bowl,add whole wheat flour,salt & mix well.
Gradually add water and knead until dough is formed,cover & let it rest for 15-20 minutes.
Grease hands with oi and knead dough again until smooth.
Take small dough and make a ball,dust dry flour and roll out with the help of rolling pin.
In the center of the dough,add 2 tbs of prepared broccoli filling,fold and seal all the edges of rolled dough.
Dust dry flour,press and spread paratha with the help of hands,prick with fork and roll out with the help of rolling pin (makes 5).
Heat griddle,place paratha,add & spread olive oil and fry paratha from both sides until done.
Serve broccoli paratha with raita.

Karhai mein olive oil aur pyaz dal dein aur translucent hunay tak saute ker lein.
Zeera dal ker ache tarhan mix karein.
Kary pata dal ker mix ker lein.
Hari mirch aur adrak dal ker ache tarhan mix karein aur 2 minutes kliya paka lein.
Lal mirch powder,haldee powder,dhania powder,garam masala powder aur namak dal ker ache tarhan mix ker lein.
Ab broccoli chopped dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
Lemon juice dal ker ache tarhan mix karein aur dhak ker halki ancch per 12-15 minutes ya gul janay tak paka lein.
Hara dhania dal dein aur masher ki madad sa ache tarhan mix & mash ker lein aur side per rakh dein.
Bowl mein atta aur namak dal ker ache tarhan mix ker lein.
Thora thora ker ka pani shamil karein aur ghond ker dough tayyar ker lein aur dhak ker 15-20 minutes kliya rakh dein.
Haathon ko oil sa grease karein aur dough ko smooth hunay tak dubara ghond lein.
Chota dough lein aur ball bana lein aur atta chirak ker rolling pin ki madad sa bail lein.
Dough ka bech mein 2 tbs tayyar broccoli mixture dal ker tamam edges ko fold ker ka seal ker lein.
Atta chorak dein aur haarh ki madad sa dough ko pheela lein phir fork sa prick karein aur rolling pin ki madad sa bail lein (makes 5).
Tawa garam karein aur paratha rakh ker olive dal ker pheela lein aur parathay ko dono sides sa fry ker lein.
