Boil 2-3 cups of water in a saucepan, add turmeric powder. On boiling add brains and boil for few minutes. Take out brains and de-vein them with hand gently.
In a pan, heat oil and add onions and fry them until brown and add tomatoes and fry until they are soft. Add spices and mix well. You can add 1-2 teaspoon of water in between to avoid burning of spices. Add brain and fry them for 7-8 minutes until oil separates. Add chopped chilies, ginger and coriander for garnish.
Brain masala is ready.
Ek degchi main pani lain, ubaal aane par haldi shamil karke boil karain aur maghaz shamil kar lain. 2-3 se minute boil karke nikal lain. Hath se maghaz ki ragain saaf karain. Ye process ihtiat se karna hai warna maghaz tootne lagega.
Ek dosri degchi main oil garm karke pyaz shamil karain. Pyaz brown hone par tamatar shamil kar ke soft karlain. Saare masala shamil karke mix karain. Beech main thora pani bhi shami kar sakte hain. Ab maghaz shamil karke kuch dair bhoon lain. Kati hue mirch, dhania aur adrak shamil karlain. Jab oil chorne lage tu brain masala tayar hai.
