Ingredients:

Prepare Beef Brain Masala:
-Pyaz (Onion) sliced 2 small
-Hari mirch (Green chillies) 4-5
-Adrak (Ginger) sliced 1-inch piece
-Lehsan (Garlic) cloves 7-8
-Himalayan pink salt ½ tsp or to taste
-Sabut dhania (Coriander seeds) crushed 1 tbs
-Haldi powder (Turmeric powder) 1 tsp
-Garam masala powder ½ tsp
-Zeera (Cumin seeds) roasted & crushed ½ tbs
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Dahi (Yogurt) whisked 4-5 tbs
-Cooking oil 4 tbs
-Sukhi lal mirch (Dry red chillies) 2-3
-Curry patta (Curry leaves) 14-15
-Water ½ Cup
-Beef brain 1 piece (375g)
-Hara dhania (Fresh coriander) chopped 1-2 tbs
-Hari mirch (Green chillies) sliced 1-2

Directions:
Method 1: Brain Freezing Method
-In a bowl,add ice cubes,water & mix well.
-Add beef brain & let it rest for 5 minutes.
-Carefully devein,cut into large pieces & set aside.
Method 2: Brain Boiling Method
-In a bowl,add hot water,pink salt,vinegar & mix well.
-Add beef brain & let it rest for 3 minutes.
-Carefully devein,cut into large pieces & set aside.
Prepare Beef Brain Masala:
-In a mortal & pestle,add onion,green chillies,ginger,garlic & crush coarsely.
-Add pink salt,coriander seeds,turmeric powder,garam masala powder,cumin seeds,red chilli powder, yogurt,mix well & set aside.
-In a wok,add cooking oil,dry red chillies,curry leaves & prepared masala,mix well & cook on low flame until oil separates (8-10 minutes).
-Add water & mix well.
-Add beef brain & mix gently.
-Add fresh coriander,green chillies,cover & cook on low flame for 10-12 minutes.
-Garnish with fresh coriander,green chilli & serve!

-Beef brain dal dein aur 5 minutes kliya chor dein.
-Carefully devein ker lein aur large pieces mein cut ker ka side per rakh dein.
Method 2: Brain Boiling Method
-Bowl mein hot water,pink salt aur pani dal ker mix ker lein.
-Beef brain dal dein aur 3 minutes kliya chor dein.
-Carefully devein ker lein aur large pieces mein cut ker ka side per rakh dein.
Prepare Beef Brain Masala:
-Mortal & pestle mein pyaz.hari mirchein,adrak aur lehsan dal ker coarsely crush ker lein.
-Pink salt,sabut dhania,hadi powder,garam masala powder,zeera,lal mirch powder aur dahi dal ker ache tarhan mix ker lein & side per rakh dein.
-Karahi mein cooking oil,sukhi lal mirch,curry patta aur tayyar masala dal ker ache tarhan mix karein aur halki ancch per oil alag ho janay tak paka lein (8-10 minutes).
-Pani dal ker ache tarhan mix ker lein.
-Beef brain dal ker gently mix ker lein.
-Hara dhania aur hari mirchein dal ker dhak dein aur halki ancch per 10-12 minutes kliya paka lein.
-Hara dhania aur hari mirch sa garnish ker ka serve karein!
