Ingredients:
-Pyaz (Onion) thinly sliced 5 medium
-Lehsan (Garlic) crushed 1 & ½ tbs
-Adrak (Ginger) crushed 1 & ½ tbs
-Dhania powder (Coriander powder) 1 & ½ tbs
-Lal mirch powder (Red chilli powder) ½ tbs or to taste
-Namak (Salt) ½ tbs or to taste
-Haldi powder (Turmeric powder) ½ tsp
-Kali mirch (Black pepper) crushed ½ tsp
-Zeera powder (Cumin powder) 1 tsp
-Dahi (Yogurt) 1/3 Cup
-Sarson ka tel (Mustard oil) 2 tbs
-Mutton mix boti 750g
-Lehsan (Garlic) desi 10-12 cloves
-Sarson ka tel (Mustard oil) 1/3 Cup
-Hari elaichi (Green cardamom) 3-4
-Laung (Cloves) 5-6
-Badiyan ka phool (Star anise) 1
-Badi elaichi (Black cardamom) 1
-Tez patta (Bay leaf) 2 small
Directions:
-In a large bowl,add onion,garlic,ginger,coriander powder,red chilli powder,salt,turmeric powder, black pepper crushed,cumin powder,yogurt,mustard oil & mix well until soft.
-Add mutton,garlic cloves,mix well & set aside.
-On a stove,place metallic heat diffuser/flat griddle (tawa) & a clay pot on it.
-Add mustard oil & bring it to smoke point.
-Add green cardamom,cloves,star anise,black cardamom,bay leaves & mix well.
-Add mutton mixture & mix well.
-Seal the pot & lid with rolled dough & cook on low flame for 1 hour & 30 minutes or until meat is tender then cook on high flame for a minute.
-Serve with rice or naan!

-Baday bowl mein pyaz,lehsan,adrak,dhania powder,lal mirch powder,namak,haldi powder,kali mirch crushed,zeera powder,dahi aur sarson ka tel dal dein aur naram ho janay tak ache tarhan mix karein.
-Mutton aur lehsan cloves dal ker ache tarhan mix ker lein & side per rakh dein.
-Chulhay per metallic heat diffuser/flat griddle (tawa) & clay pot rakh dein.
-Sarson ka tel dal ker smoke point anay tak garam karein.
-Hari elaichi,laung,badiyan ka phool,badi elacihi aur tez patta dal ker ache tarhan mix karein.
-Mutton mixture dal ker ache tarhan mix ker lein.
-Pot aur lid ko rolled dough sa ache tarhan seal ker lein aur halki ancch per ghost gul janay tak paka lein (1 hour & 30 minutes) phir tez ancch per ek minute kliya paka lein.
-Chawal aur naan ka saath serve karein!
