Ingredients:
- Dahi (Yogurt) hung 1 Cup
- Kacha papita (Raw papaya) paste 1 & ½ tbs
- Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
- Pyaz (Onion) fried & crushed 2 tbs
- Tikka masala 2 & ½ tbs
- Mutton boneless cubes ½ kg
- Cooking oil 3-4 tbs
- Pyaz (Onion) chopped 1 medium
- Kishmish (Raisins) 2 tbs
- Gajar (Carrot) julienne 1 Cup
- Zeera powder (Cumin powder) ½ tsp
- Saunf (Fennel seeds) powdered ½ tsp
- Namak (Salt) 1 tsp or to taste
- Garam masala powder 1/4 tsp
- Stock cubes 2
- Chawal (Rice) soaked 2 Cups
- Pani (Water) 3 Cups or as required
- Cooking oil 2 tbs
- Koyla (Charcoal) for smoke
- Cooking oil 1 tsp
- Pyaz (Onion) rings
- Tamatar (Tomatoes) julienne
- Shimla mirch (Capsicum) julienne
Directions:
In bowl,add yogurt,raw papaya paste,ginger garlic paste,fried onion,tikka masala and whisk well.
Add mutton boneless cubes and mix well,cover and marinate for 2 hours.
In pot,add cooking oil,onion and fry until translucent.
Add raisins and mix.
Add carrots and mix well.
Add cumin powder,fennel seeds powder,salt,garam masla powder,stock cubes and mix well.
Add rice and mix well.
Add water,mix and bring it to boil,cover and cook on low flame for 15-20 minutes & set aside.
In frying pan,add cooking oil,marinated mutton and mix well,cover and cook on low flame for 25-30 minutes or until meat is tender then cook on high flame until oil separates.
Give a charcoal smoke for 2-3 minutes then take out in a bowl.
In the same frying pan,add cooking oil,onion rings,tomato,capsicum and stir fry for 1-2 minutes.
In serving dish,add cooked rice,stir fried vegetables,cooked mutton & serve!

Mutton boneless cubes dal ker ache tarhan mix karein aur 2 hours kliya marinate ker lein.
Pot mein cooking oil aur pyaz dal dein aur translucent hunay tak fry ker lein.
Kishmish dal ker mix karein.
Gajar dal ker ache tarhan mix ker lein.
Zeera powder,saunf powder,namak,garam masala powder aur stock cubes dal ker ache tarhan mix ker lein.
Chawal dal ker ache tarhan mix karein.
Pani dal ker mix karein aur ubal anay k bad dhak dein aur halki ancch per 15-20 minutes kliya paka lein & side per rakh dein.
Frying pan mein cooking oil aur marinated mutton dal ker ache tarhan mix karein aur halki ancch per 25-30 minutes ya gosht gul janay tak paka lein phit tez ancch per oil alag hunay tak paka lein.
2-3 minutes kliya koyla ka dhuwan dein phir bowl mein nikal lein.
Us he frying pan mein cooking oil,pyaz rings,tamatar aur shimla mirch dal ker 1-2 minutes kliya stir fry ker lein.
Serving dish mein cooked chawal,stir fried vegetbales aur cooked mutton dal ker serve karein!
