Ingredients:
Arvi Bhujia:
- Arvi (Taro root) peeled 700g
- Water as required
- Namak (Salt) 2 tbs
- Cooking oil 3-4 tbs
- Zeera (Cumin seeds) 1 & ½ tsp
- Pyaz (Onion) chopped 2 medium
- Adrak lehsan paste (Ginger garlic paste) 1 tsp
- Tamatar (Tomatoes) chopped 2 medium
- Lal mirch powder (Red chilli powder) 1 tsp or to taste
- Namak (Salt) 1 tsp or to taste
- Haldi powder (Turmeric powder) ½ tsp
- Water 1 Cup or as required
- Saunf (Fennel seeds) crushed 1 tsp
- Sabut dhania (Coriander seeds) crushed ½ tsp
- Lal mirch (Red chilli) crushed 1 tsp
- Water ½ Cup or as required
- Hara dhania (Fresh coriander) chopped 1-2 tbs
- Lemon juice ½ tbs
- Hara dhania (Fresh coriander) chopped
Aalo Turai Bhujia:
- Cooking oil 2-3 tbs
- Zeera (Cumin seeds) 1 tsp
- Adrak lehsan paste (Ginger garlic paste) 1 & ½ tsp
- Turai (Ridge gourd) peeled & sliced 1 kg
- Lal mirch powder (Red chilli powder) 1 tsp or to taste
- Namak (Salt) 1 & ½ tsp or to taste
- Aloo (Potatoes) peeled & sliced 3 medium
- Cooking oil 4-5 tbs
- Lehsan (Garlic) chopped 2-3 cloves
- Sabut lal mirch (Button red chillies) 3-4
- Pyaz (Onion) sliced 2 medium
- Tamatar (Tomatoes) sliced 2
- Water ¼ Cup or as required
- Dhania powder (Coriander powder) 1 tsp
- Zeera powder (Cumin powder) ½ tsp
- Kali mirch powder (Black pepper powder) ½ tsp
- Haldi powder (Turmeric powder) 1 tsp
- Namak (Salt) ½ tsp or to taste
- Lemon juice 1 tbs
- Garam masala powder ½ tsp
- Hara dhania (Fresh coriander) chopped 2 tbs
- Hari mirch (Green chillies) 2-3
- Hara dhania (Fresh coriander) chopped
Directions:
In a bowl,add taro root,water,salt,mix well & rest it for 30 minutes then strain & set aside.
In a wok,add cooking oil,cumin seeds & fry for 30 seconds.
Add onion,mix well and sauté until translucent.
Add ginger garlic paste and mix well.
Add tomatoes & mix well.
Add red chilli powder,salt,turmeric powder,mix well & cook for 2-3 minutes.
Add taro root & mix well.
Add water and mix well,cover & cook on medium low flame until tender (15-20 minutes) and keep mixing in between.
Add fennel seeds,coriander seeds,red chilli crushed & mix well.
Add water & mix well.
Add fresh coriander,cover & simmer on low flame for 2-3 minutes.
Add lemon juice & mix well.
Garnish with fresh coriander & serve!
Aalo Turai Bhujia:
In a wok,add cooking oil,cumin seeds & fry for 30 seconds.
Add ginger garlic paste & mix well.
Add ridge gourd,red chilli powder & mix well.
Add salt & mix well,cover & cook on low flame for 5-6 minutes then cook on high flame for 1-2 minutes.
Add potatoes & mix well,cover & cook on low flame until tender (8-10 minutes) then cook on medium high flame until water dries.
In a frying,pan add cooking oil,garlic & fry until light golden.
Add red button chilies & mix well.
Add onion,mix well & fry until light golden.
Add tomatoes and water,mix well and cook until tomatoes are soft (2-3 minutes).
Add coriander powder,cumin powder,black pepper powder,turmeric powder,salt,mix well & cook for 2-3 minutes or until oil separates.
In a pot,add prepared tomato & onion mixture & mix well.
Add lemon juice,garam masala powder,fresh coriander and green chillies,cover & simmer on low flame for 1-2 minutes.
Garnish with fresh coriander & serve!

Directions:
Bowl mein arvi,pani aur namak dal ker ache tarhan mix karein aur 30 minutes kliya chor dein phir strain ker ka side per rakh dein.
Karahi mein cooking oil aur zeera dal dein aur 30 seconds liya fry karein.
Pyaz dal ker ache tarhan mix karein aur translucent hunay tak sauté ker lein.
Adrak lehsan paste dal ker ache tarhan mix karein.
Tamatar dal ker ache tarhan mix ker lein.
Lal mirch powder,namak aur haldi powder dal ker ache tarhan mi karein aur 2-3 minutes kliya paka lein.
Arvi dal ker ache tarhan mix karein.
Pani dal ker mix karein aur dhak ker darmiyani halki ancch per gul janay tak paka lein (15-20 minutes) aur bech bech mein mixing kertay rahein.
Saunf,sabut dhania aur lal mirch crushed dal ker ache tarhan mix karein.
Panil shamil karein aur mix ker lein.
Hara dhania dal ker dhak dein aur halki ancch per 2-3 minutes kliya dum per rakh dein.
Lemon juice dal ker ache tarhan mix karein.
Hara dhania dal ker serve karein!

Adrak lehsan dal ker ache tarhan mix karein.
Turai aur lal mirch powder dal ker ache tarhan mix ker lein.
Namak dal ker mix karein aur dhak ker halki ancch per 5-6 minutes kliya paka lein phir tez ancch per 1-2 minutes kliya paka lein.
Aloo dal ker ache tarhan mix karein aur dhak ker halki ancch per gul janay tak paka lein (8-10 minutes) phir darmiyani te ancch per pani sukh janay tak pake lein.
Frying pan mein cooking oil aur lehsan dal dein aur light golden hunay tak fry ker lein.
Sabut lal mirch dal ker ache tarhan mix karein.
Pyaz dal ker ache tarhan mix karein aur light golden hunay tak fry ker lein.
Tamatar aur pani dal ker mix karein aur tamatar naram ho janay tak paka lein (2-3 minutes).
Dhania powder,zeera powder,kali mirch powder,haldi powder aur namak dal ker ache tarhan mix karein aur 2-3 minutes ya oil alag ho janay tak paka lein.
Pot mein tayyar tamatar aur pyaz mixture dal ker ache tarhan mix karein.
Lemon juice,garam masala powder,hara dhania aur hari mirch dal ker dhak dein aur halki ancch per 1-2 minutes kliya paka lein.
