Ingredients:
Prepare Achari Masala Cooking Sauce: (Make & Store)
- Sabut dhania (Coriander seeds) 1 & ½ tbs
- Zeera (Cumin seeds) 2 tbs
- Saunf (Fennel seeds) 2 tbs
- Ajwain (Carom seeds) ½ tsp
- Kalonji (Nigella seeds) ½ tsp
- Namak (Salt) 1 tbs pr to taste
- Lal mirch powder (Red chilli powder) 1 tbs or to taste
- Garam masala powder 1 & ½ tsp
- Chaat masala 1 & ½ tsp
- Haldi powder (Turmeric powder) 1 & ½ tsp
- Dhania powder (Coriander powder) ½ tbs
- Lal mirch (Red chilli) crushed 1 tbs
- Tatri (Citric acid) ¼ tsp
- Kashmiri lal mirch (Kashmiri red chilli) powder
- Cooking oil ¼ Cup
- Pyaz (Onion) sliced 4-5 medium
- Tamatar (Tomatoes) slices 4 medium
- Adrak lehsan paste (Ginger garlic paste) 3 tbs
- Lemon juice 2 tbs
- Dahi (Yogurt) whisked 1 Cup (room temperature)
- Water ½ Cup or as required
- Sugar 1 tsp
- Water ½ Cup or as required
How to Prepare Achar Gosht with Achari Masala Cooking Sauce: Cooking Time: 15-20 minutes
- Hari mirch (Green chillies) 6-7
- Cooking oil 2 tsp
- Cooking oil 3-4 tbs
- Boneless chicken ½ kg
- Water ½ Cup or as required
Directions:
Prepare Achari Masala Cooking Sauce: (Make & Store)
In frying pan,add coriander seeds,cumin seeds,fennel seeds,carom seeds and dry roast until fragrant (2 minutes).
Let it cool.
In mortal & pestle,add roasted spices and pound spices coarsely.
Take out in a jar,add nigella seeds,salt,red chilli powder,garam masala powder,chaat masala, turmeric powder,coriander powder,red chilli crushed,citric acid,Kashmiri red chilli powder,cover and shake well.
Achari masala is ready & set aside.
In a pot,add cooking oil,onion and fry until light golden.
Add tomatoes and mix well.
Add ginger garlic paste,mix well and cook for 1-2 minutes.
Turn off the flame,add lemon juice,yogurt and mix well.
Turn on the flame and cook on medium flame for 4-5 minutes.
Add water and mix well.
Turn off the flame and blend well with the help of the hand blender.
Turn on the flame,add prepared achari masala (spice mix) and mix well.
Add sugar and mix well.
Add water and mix well,cover and cook on low flame for 2-3 minutes.
Let it cool (Yields 1000g).
Store in clean & sterilized jar.
Storage:
1 month in freezer.
1 week in refrigerator.
How to Prepare Achar Gosht with Achari Masala Cooking Sauce: Cooking Time: 15-20 minutes
Slit green chillies from the center,add prepared achari masala cooking sauce (1 tsp) & set aside.
In a wok,add cooking oil and fry stuffed green chillies for 2-3 minutes & set aside for later use.
In the same wok,add cooking oil,chicken and mix well until it changes color.
Now add prepared achari masala cooking sauce (400-500g),mix well and cook for 2-3 minutes.
Add water and mix well,cover and cook on low flame for 4-5 minutes.
Now add fried green chillies,cover and simmer on low flame for 1-2 minutes & serve!

Jar mein nikal lein,kalonji,namak,lal mirch powder,garam masala powder,chaat masala,haldi powder,dhania powder,lal mirch crushed,tatri aur kashmiri lal mirch powder dal ker cover laga lein aur ache tarhan shake ker lein.
Achari masala tayyar hai,side per rakh dein.
Pot mein cooking aur pyaz dal dein aur light golden hunay tak fry ker lein.
Tamatar dal ker ache tarhan mix ker lein.
Adrak lehsan paste dal ker ache tarhan mix karein aur 1-2 minutes kliya paka lein.
Chulha bund ker dein,lemon juice aur dahi dal ker ache tarhan mix karein.
Chulha on karein aur darmiyani ancch per 4-5 minutes kliya paka lein.
Pani dal ker ache tarhan mix karein.
Chulha bund ker dein aur hand blender ki madad sa ache tarhan blend ker lein.
Chulha on karein aur tayyar achari masala (spice mix) dal ker ache tarhan mix ker lein.
Cheeni dal ker ache tarhan mix ker lein.
Pani dal ker ache tarhan mix karein aur dhak ker halki ancch per 2-3 minutes kliya paka lein.
Thanda ker lein (Yields 1000g).

Us he karahi mein cooking oil aur chicken dal dein aur rang tabdeel hunay tak ache tarhan mix ker lein.
Ab tayyar achari masala cooking sauce (400-500g) dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
Pani dal ker mix karein aur dhak ker halki ancch per 4-5 minutes kliya paka lein.
Ab fried hari mirchein dal ker dhak dein aur halki ancch per 1-2 minutes kliya dum per rakh dein & serve karein!
