Ingredients:
-Aalo (Potatoes) small cubes 2 large
-Water as required
-Palak (Spinach) chopped 300g
-Pyaz (Onion) chopped 2 medium
-Adrak lehsan paste (Ginger garlic paste) ½ tbs
-Sabut dhania (Coriander seeds) crushed 1 tbs
-Himalayan pink salt ½ tsp or to taste
-Lal mirch (Red chilli) crushed 1 tsp
-Haldi powder (Turmeric powder) ½ tsp
-Chaat masala 1 tsp
-Ajwain (Carom seeds) ½ tsp
-Zeera powder (Cumin powder) 1 tsp
-Til (Sesame seeds) white & black 1 & ½ tsp
-Hara dhania (Fresh coriander) chopped ¼ Cup
-Baisan (Gram flour) ¾ Cup
-Hari mirch (Green chillies) chopped 2-3
-Cooking oil 2-3 tbs
Prepare Tomato Chutney:
-Tamatar (Tomatoes) 2 medium
-Hara dhania (Fresh coriander) handful
-Hari mirch (Green chillies) 2-3
-Lemon juice 3 tbs
-Lal mirch (Red chilli) crushed 1 tsp
-Kala namak (Black salt) ½ tsp
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Chaat masala ½ tsp
-Water 3-4 tbs
Directions:
-In a saucepan,add potatoes,water & bring it to boil,cover & cook on medium flame until 90% done (4-5 minutes),strain & set aside.
-In a bowl,add spinach,onion,ginger garlic paste,coriander seeds,pink salt,red chilli crushed,turmeric powder,chaat masala,carom seeds,cumin powder,sesame seeds,fresh coriander & mix well,cover & let it rest for 5 minutes.
-Add gram flour,green chillies,cooking oil,boiled potatoes & mix well.
-Take small quantity of mixture & place them in air fryer basket.
-Air fry in preheated air fryer at 170°C for 15 minutes.
Prepare Tomato Chutney:
-In a blender jug,add tomatoes,fresh coriander,green chillies,lemon juice,red chilli crushed,black salt, cumin seeds,chaat masala,water & blend well.
-Serve aalo palak pakora with tomato chutney!
