Ingredients:
Prepare Daal Makhni:
-Mong daal (Yellow lentil) ½ Cup (soaked for 2 hours)
-Masoor daal (Red lentil) ½ Cup (soaked for 2 hours)
-Haldi powder (Turmeric powder) 1 tsp
-Zeera powder (Cumin powder) ½ tsp
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Tamatar (Tomatoes) 2 medium
-Water 3-4 Cups
-Hot water 1-2 Cups
-Namak (Salt) 1 & ½ tsp or to taste
-Cooking oil 2 tbs
-Makhan (Butter) 2-3 tbs
-Zeera (Cumin seeds) ½ tsp
-Hing (Asafetida) ¼ tsp
-Sukhi lal mirch (Dried red chillies) 2-3
-Curry patta (Curry leaves) 10-12
-Makhan (Butter)
Prepare Chicken Kabab:
-Boneless chicken cubes 350g
-Pyaz (Onion) 1 medium
-Sabut lal mirch (Button red chillies) 5-6
-Sabut kali mirch (Black peppercorns) 10-12
-Badi elaichi (Black cardamom) 1
-Darchini (Cinnamon stick) 2
-Laung (Cloves) 2
-Zeera (Cumin seeds) 1 tsp
-Adrak lehsan paste (Ginger garlic paste) 1 tsp
-Water 1 & ½ Cup
-Aalo (Potatoes) boiled 3 medium (300g)
-Namak (Salt) 1 tsp or to taste
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Sabut dhania (Coriander seeds) roasted & crushed 1 tbs
-Maida (All-purpose flour) roasted 1-2 tbs
-Hara dhania (Fresh coriander) chopped 2 tbs
-Cooking oil for frying
-Anday (Eggs) whisked 2
Prepare Chicken Chillos:
-Imli pulp (Tamarind pulp) 2-3 tbs
-Chaat masala 1 tsp
-Hari mirch (Green chillies) 9-10
-Maida (All-purpose flour) 1 Cup or as required
-Anday (Eggs) whisked 2-3
-Breadcrumbs 1 Cup or as required
-Cooking oil for frying
Directions:
Prepare Daal Makhni:
-In a pot,add yellow lentil,red lentil,turmeric powder,cumin powder,red chilli powder,tomatoes, water,mix well & bring it to boil,cover & cook on low flame until lentils are tender (18-20 minutes) & stir in between.
-Turn off the flame and blend with the help of hand blender.
-Turn on the flame,add hot water,salt,mix well,bring it to boil & cook on medium flame until desired consistency (2-3 minutes).
-In a frying pan,add cooking oil,butter & let it melt.
-Add cumin seeds,asafetida,dried red chillies,curry leaves & mix well.
-Add prepared tadka in daal,cover & let it rest for 10 minutes (no flame).
-Garnish with butter & serve!
Prepare Chicken Kabab:
-In a saucepan,add chicken,onion,button red chillies,black peppercorns,black cardamom,cinnamon stick,cloves,cumin seeds,ginger garlic paste,water & mix well,bring it to boil,cover & cook on low flame until chicken is tender (14-15 minutes) then cook on high flame until water dries up (approx. 3-4 minutes).
-Let it cool.
-In a chopper,add boiled chicken mixture,chop well & set aside.
-In a bowl,grate potato with the help of grater,add chicken mixture,salt,red chilli powder,coriander seeds,all-purpose flour,fresh coriander & mix until well combined.
-Reserve ½ Cup of mixture for later use.
-Grease hands with oil,take small quantity of mixture (50g),make kababs of equal sizes (makes 9-10).
-In a frying pan,heat cooking oil,dip kababs in whisked eggs & fry from both sides until golden brown.
Prepare Chicken Chillos:
-In reserved kebab mixture,add tamarind pulp,chaat masala & mix well.
-Slit green chillies with the help of knife and deseed them.
-Stuffed green chillies with prepared filling,coat with all-purpose flour,dip in whisked eggs & coat with breadcrumbs then again dip in whisked eggs & coat with breadcrumbs (makes 9).
-In a wok,heat cooking oil & deep fry chicken chillos on medium flame until golden & crispy.
-Serve daal makhni with boiled rice,chicken kabab,chicken chillos,onion & pickle.

-Pot mein mong daal,masoor daal,haldi powder,zeera powder,lal mirch powder,tamatar aur pani dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur halki ancch per daalein gul janay tak paka lein (18-20 minutes) aur bech bech mein chamcha chalatay rahein.
-Chulha bund ker dein aur hand blender ki madad sa ache tarhan blend ker lein.
-Chulha on karein,garam pani aur namak dal ker ache tarhan mix karein aur ubal anay ka bad darmiyani ancch per desired consistency ajanay tak paka lein (2-3 minutes).
-Frying pan mein cooking oi aur makhan dal ker melt ker lein.
-Zeera,hing,sukhi lal mirch aur curyy patta dal ker ache tarhan mix ker lein.
-Daal mein tayyar tadka dal dein aur cover ker 10 minutes kliya chor dein (no flame).
-Makhan sa garnish ker ka serve karein!
Prepare Chicken Kabab:
-Saucepan mein chicken,pyaz,sabut lal mirch,sabut kali mirch,badi elaichi,darchini,laung,zeera,adrak lehsan paste aur pani dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur halki ancch per chicken gul janya tak paka lein (14-15 minutes) phir tez ancch per pani sukh janay tak paka lein (approx. 3-4 minutes).
-Thanda ker lein.
-Chopper mein boiled chicken mixture dal ker ache tarhan chop ker lein & side per rakh dein.
-Bowl mein aalo ko grater ki madad sa grate ker lein,chicken mixture,namak,lal mirch powder,sabur dhania,maida aur hara dhania dal ker ache tarhan mix ker lein.
-1/2 cup mixture ko bad mein use kernay kliya side per rakh dein.
-Mixture ki small quantity ko alag bowl mein nikal lein (approx. 120g) & bad mein use kernay kliya side per rakh dein.
-Haathon ko oil sa grease karein,mixture ki small quantity (50g) lein aur ek jaisay sizes ka kabab tayyar ker lein (makes 9-10).
-Frying pan mein cooking oil garam karein,kababs ko whisked anday mein dip karein aur dono sides sa golden brown ho janay tak fry ker lein.
Prepare Chicken Chillos:
-Reserved kabab mixture mein imli pulp aur chaat masala dal ker ache tarhan mix ker lein.
-Hari mirch mein knife ki madad sa slit laga ker seeds ko nikal dein.
-Tayyar filling ko hari mirchon mein bhar dein,maida mein coat ker ka pheetay hoye anday mein dip karein aur breadcrumbs mein coat ker lein phir dubara anday mein dip karein aur breadcrumbs mein cota ker lein (makes 9).
-Karahi mein cooking oil garam karein aur chicken chillos ko darmiyani ancch per golden & crispy ho janay tak deep fry ker lein.
-Daal makhni ko boiled chawal,chicken kabab,chicken chillos,pyaz aur achar ka saath serve karein!
