7 Layer Chana Chaat

Ingredients:

Prepare Street Style Meethi Chutney:

-Water 1 & ½ Cup

-Imli pulp (Tamarind pulp) 1 Cup (50g tamarind soaked in 1 Cup water)

-Gur (Jaggery) 250g

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Zeera (Cumin seeds) roasted & crushed 1 tsp

-Namak (Salt) ½ tsp or to taste

-Red food color ¼ tsp or as required

-Cornflour 1 tbs

-Water 3-4 tbs

Prepare Yogurt Mixture:

-Dahi (Yogurt) ½ kg

-Sugar powdered 1 tbs

-Namak (Salt) ¼ tsp or to taste

-Tamatar (Tomato) deseeded & chopped 1 Cup

-Pyaz (Onion) chopped 1 Cup

-Kheera (Cucumber) deseeded & chopped 1 Cup

Prepare Hari Chutney:

-Podina (Mint leaves) handful

-Hara dhania (Fresh coriander) handful

-Lehsan (Garlic) cloves 2

-Adrak (Ginger) 1 inch piece

-Hari mirch (Green chillies) 5-6

-Sev nimco 2 tbs

-Namak (Salt) ½ tsp or to taste

-Zeera (Cumin seeds) roasted & crushed 1 tsp

-Lemon juice 2 tbs

-Water ¼ Cup or as required

Assembling:

-Safed chanay (Chickpeas) boiled ½ kg

-Chaat masala

-Lal mirch (Red chilli) crushed

-Aloo (Potatoes) boiled & cubes 4 medium

-Mong phali (Peanuts)

-Sev nimco

-Papri

-Sabut mong daal (Whole green gram) soaked & boiled 1 Cup

-Dahi phulkiyan (soaked in warm water for 5 minutes)

 

Directions:

Prepare Street Style Meethi Chutney:

-In a saucepan,add water,tamarind pulp,jaggery and mix well.

-Add red chilli powder,cumin seeds,salt and mix well,bring it to boil & cook on medium flame for 6-8 minutes.

-Add red food color & mix well.

-In a small bowl,add cornflour,water & mix well.

-Now add dissolved cornflour,mix well & cook until it thickens (1-2 minutes).

-Let it cool.

-Can be stored in an airtight jar for up to 1 month in refrigerator.

Prepare Yogurt Mixture:

-In a bowl,add yogurt,sugar,salt,whisk well & set aside.

-In a bowl,add tomato,onion,cucumber,mix well & set aside.

Prepare Hari Chutney:

-In a blender jug,add mint leaves,fresh coriander,garlic,ginger,green chillies,sev nimco,salt,cumin seeds,lemon juice and water,blend well & set aside.

Assembling:

-In a deep serving bowl,add boiled chickpeas,chaat masala,red chilli crushed,prepared hari chutney, mixed vegetable salad,boiled potatoes,prepared meethi chutney,peanuts,sev nimco,prepared yogurt meethi chutney,hari chutney,papri,boiled whole green gram,chaat masala,dahi phulkiyan, yogurt,meethi chutney,hari chutney,red chilli crushed,sev nimco & serve!
