Ingredients:
Mix vegetable Raita:

-Pyaz (Onion) chopped ½ Cup
-Kheera (Cucumber) chopped ½ Cup
-Tamatar (Tomato) deseeded & chopped ½ Cup
-Band gobhi (Cabbage) shredded ½ Cup
Baisan Ka Raita:
-Besan (Gram flour) sifted 1 Cup
-Namak (Salt) 1 tsp or to taste
-Haldi powder (Turmeric powder) 1 tsp
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tsp
-Water 3 Cups
-Cooking oil 2 tbs
-Zeera (Cumin seeds) ½ tsp
-Rai dana (Mustard seeds) ¼ tsp

-Zeera (Cumin seeds) roasted & crushed ½ tsp

Zucchini Raita:
-Zucchini 2 medium
-Boiling water 3 Cups or as required
-Dahi (Yogurt) 2 Cups
-Lehsan (Garlic) chopped 1 clove
-Hari mirch (Green chilli) chopped 1 tbs
-Namak (Salt) ½ tsp or to taste
-Kali mirch (Black pepper) crushed ½ tsp
-Zeera (Cumin seeds) roasted & crushed ¼ tsp
-Hara dhania (Fresh coriander) chopped 1-2 tbs
-Kalonji (Nigella seeds)
-Lal mirch powder (Red chilli powder)
Lauki Ka Raita:
-Dahi (Yogurt) 2 Cups
-Lal mirch (Red chilli) crushed ½ tsp
-Adrak lehsan paste (Ginger garlic paste) 1 tsp
-Namak (Salt) ½ tsp or to taste
-Hara dhania (Fresh coriander) chopped 1-2 tbs
-Boiling water 3 Cups or as required
-Lauki (Bottle gourd) cubes 2 medium (300g)
-Namak (Salt) ¼ tsp or to taste
Tadka: (optional)
-Cooking oil 2-3 tbs or as required
-Lehsan (Garlic) chopped ½ tsp
-Zeera (Cumin seeds) ½ tsp
-Rai dana (Mustard seeds) ¼ tsp
-Sabut lal mirch (Button red chilies) 4-5
-Curry patta (Curry leaves) 8-10
Roasted Tomato Raita:
-Tamatar (Tomatoes) 4 medium
-Dahi (Yogurt) 2 Cups
-Lal mirch (Red chilli) crushed ½ tsp
-Namak (Salt) ½ tsp or to taste
-Chaat masala ¼ tsp
-Hara dhania (Fresh coriander) chopped 1-2 tbs
-Hara dhania (Fresh coriander) chopped
Directions:
Mix Vegetable Raita:
-In a bowl,add yogurt,black pepper crushed,salt,black salt,green chilli,dill,mint leaves & whisk well.
-Add carrot,onion,cucumber,tomato,cabbage and mix well.
-Garnish with mint leaves & serve!
Baisan Ka Raita:
-In a bowl,add gram flour,salt,turmeric powder,red chilli powder,ginger garlic paste,gradually add water & whisk well.
-In a frying pan,add cooking oil,cumin seeds,mustard seeds & mix well.
-Add gram flour mixture,mix well & cook on low flame until mixture it thick & sticky and mix continuously.
-On 5 x 9 inch greased tray,add & spread evenly.
-Let it cool completely then cut into small cubes & set aside.
-In a bowl,add yogurt,cumin seeds,salt,black salt,fresh coriander & whisk well.
-Add gram flour cubes in prepared yogurt mixture,mix gently & set aside.
Prepare Tadka:
-In a frying pan,add cooking oil,ginger & mix well.
-Add cumin seeds,mustard seeds,dried red chillies,curry leaves & mix well.
-Add tadka over prepared raita & serve!
Zucchini Raita:
-Peel zucchini & grate with the help of garter in a bowl (approx. 300g).
-In boiling water,place strainer & add grated zucchini and blanch for 2 minutes then strain.
-Let it cool completely.
-In a bowl,add yogurt,garlic,green chilli,salt,black pepper crushed,cumin seeds,fresh coriander & whisk well.
-Now add blanched zucchini & mix well.
-Garnish with nigella seeds,red chilli powder & serve!
Lauki Ka Raita:
-In a bowl,add yogurt,red chilli crushed,ginger garlic paste,salt,fresh coriander,whisk well & set aside.
-In boiling water,add bottle gourd,salt & mix well,cover & cook on medium flame until tender (10-12 minutes) then strain.
-Let it cool completely.
-In a bowl,add boiled bottle gourd and mash coarsely with the help of the masher.
-Add prepared yogurt mixture,mix well & set aside.
Prepare Tadka:
-In a frying pan,add cooking oil,add garlic & mix well.
-Add cumin seeds,mustard seeds,button red chillies,curry leaves & mix well until light golden.
-Add & spread tadka over prepared lauki raita & serve!
Roasted Tomato Raita:
-Fire roast tomatoes over medium flame until skin is charred and remove charred skin & discard then roughly chop roasted tomato & set aside.
-In a bowl,add yogurt,red chilli crushed,salt,chaat masala,fresh coriander & whisk well.
-Add roasted tomato chopped and mix well.
-Garnish with cherry tomato,fresh coriander & serve!

-Gajar,pyaz,kheera,tamatar aur band gobhi dal ker ache tarhan mix ker lein.
-Podina sa garnish ker ka serve karein.
Baisan Ka Raita:
-Bowl mein besan,namak,haldi powder,lal mirch powder,adrak lehsan paste aur thora thora ker ka pani shamil karein aur ache tarhan whisk ker lein.
-Frying pan mein cooking oil,zeera aur rai dana dal ker ache tarhan mix ker lein.
-Besan ka mixture dal ker ache tarhan mix karein aur halki ancch per mixture garha & sticky ho janay tak paka lein aur musalsal mix kertay rahein.
-5 x 9 inch greased tray per dal ker evenly pheela lein.
-Thanda ker lein phir small cubes mein cut ker lein & side per rakh dein.
-Bowl mein dahi,zeera,namak,kala namak aur hara dhania dal ker ache tarhan whisk ker lein.
-Besan ka cubes ko tayyar dahi ka raita mein dal ker gently mix karein.
Prepare Tadka:
-Frying pan mein cooking oil aur adrak dal ker ache tarhan mix karein.
-Zeera,rai dana,sukhi lal mirch aur curry patta dal ker ache tarhan mix ker lein.
-Tadka ko tayyar raita ka upper dal ker serve karein.
Zucchini Raita:
-Zucchini ko peel ker lein aur grater ki madad sa bowl mein grate ker lein (approx. 300g).
-Boiling water mein strainer rakh dein aur grated zucchini dal ker 2 minutes kliya blanch ker lein phir strain ker lein.
-Thanda ker lein.
-Bowl mein dahi,lehsan,hari mirch,namak,kali mirch crushed,zeera aur hara dhania dal ker ache tarhan whisk ker lein.
-Ab blenched zucchini dal ker ache tarhan mix karein.
-Kalonji aur lal mirch powder dal ker serve karein!
Lauki Ka Raita:
-Bowl mein dahi,lal mirch crushed,adrak lehsan paste,namak aur hara dhania dal ker ache tarhan whisk ker lein & side per rakh dein.
-Boiling water mein lauki aur namak dal ker ache tarhan mix karein aur dhak ker darmiyani ancch per gul janay tak paka lein (10-12 minutes) phir strain ker lein.
-Thanda ker lein.
-Bowl mein boiled lauki dal ker masher ki madad sa coarsely mash ker lein.
-Tayyar dahi mixture dal ker ache tarhan mix karein & side per rakh dein.
Prepare Tadka:
-Frying pan mein cooking oil aur lehsan dal ker ache tarhan mix karein.
-Zeera,rai dana,sabut lal mirch aur curry patta dal ker dein aur light golden ho janay tak ache tarhan mix ker lein.
-Tayyar lauki ka raita ka upper tadka dal ker serve karein.
Roasted Tomato Raita:
-Tamatar ko chulhay per charred ho janay tak darmiyani ancch per fire roast ker lein aur charred skin ko nikal lein phir tamatar ko roughly chop ker lein & side per rakh dein.
-Bowl mein dahi,lal mirch crushed,namak,chaat masala aur hara dhania dal ker ache tarhan whisk ker lein.
-Roughly chopped tamatar dal ker ache tarhan mix ker lein.
-Cherry tomato aur hara dhania sa garnish ker ka serve karein!
