Ingredients:

1 Potato Salad:

-Mayonnaise 5 tbs or as required

-Mustard paste ½ tbs

-Kali mirch powder (Black pepper powder) ½ tsp

-Namak (Salt) ½ tsp or to taste

-Sirka (Vinegar) 1 & ½ tbs

-Aloo (Potatoes) 3 medium (boiled & small cubes)

-Anday (Eggs) boiled & chopped 3

-Pyaz (Onion) chopped 1 medium

-Hara dhania (Fresh coriander) chopped 2 tbs

-Pickled jalapeno chopped 2-3 tbs

-Anda (Egg) boiled 1

-Hara dhania (Fresh coriander) chopped

-Paprika powder

2 Dahi walay Aloo:

-Cooking oil 4 tbs

-Zeera (Cumin seeds) 1 tsp

-Curry patta (Curry leaves) 8-10

-Pyaz (Onion) grated 2 medium

-Adrak lehsan paste (Ginger garlic paste) 1 tbs

-Haldi powder (Turmeric powder) ½ tsp

-Namak (Salt) ½ tsp or to taste

-Dhania powder (Coriander powder) 1 tsp

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Zeera powder (Cumin powder) ½ tsp

-Garam masala powder ½ tsp

-Water 1 Cup or as required

-Dahi (Yogurt) whisked 1 & ½ Cup

-Aloo (Potatoes) boiled 3 medium

-Hara dhania (Fresh coriander) chopped

3 Cajun Potatoes:

-Lehsan powder (Garlic powder) 1 tsp

-Lal mirch powder (Red chilli powder) ½ tsp or to taste

-Namak (Salt) ½ tsp or to taste

-Onion powder 1 tsp

-Kali mirch powder (Black pepper powder) ½ tsp

-Paprika powder 1 & ½ tsp

-Mixed herbs 1 tsp

-Mayonnaise ½ Cup

-Doodh (Milk) ¼ Cup

-Aloo (Potatoes) small ½ kg (boiled with skin)

-Maida (All-purpose flour) ½ Cup

-Lal mirch (Red chilli) crushed 1 tsp

-Mixed herbs ½ tsp

-Kali mirch (Black pepper) crushed ½ tsp

-Namak (Salt) ½ tsp or to taste

-Water ½ Cup or as required

-Cooking oil ¼ Cup

-Pyaz (Onion) chopped

-Hara dhania (Fresh coriander) chopped

-Lal mirch (Red chilli) crushed

4 Egg Potato Sandwich:

-Aloo (Potatoes) boiled 2 medium

-Anday (Eggs) hard boiled 2

-Mayonnaise 4 tbs or as required

-Lal mirch (Red chilli) crushed 1 tsp

-Lehsan powder (Garlic powder) 1 tsp

-Kali mirch powder (Black pepper powder) ½ tsp

-Namak (Salt) ½ tsp or to taste

-Soya (Dill) chopped 3 tbs

-Hara dhania (Fresh coriander) chopped 2 tbs

-Lemon juice 1 tbs

-Bread of your choice

-Makhan (Butter)

-Iceberg as required

-Cheese slices 2

-Cherry tomato

-Hara dhania (Fresh coriander) chopped

5 Crispy Potato Pancakes:

-Aloo (Potatoes) 4 medium

-Water as required

-Pyaz (Onion) chopped 1 medium

-Kali mirch powder (Black pepper powder) ½ tsp

-Lehsan powder (Garlic powder) 1 tsp

-Namak (Salt) 1 tsp or to taste

-Maida (All-purpose flour) 4 tbs or as required

-Anda (Egg) 1

-Cooking oil 1-2 tbs

 

Directions:

Prepare Potato Salad:

-In a bowl,add mayonnaise,mustard paste,black pepper powder,salt,vinegar & whisk well.

-Add potatoes,eggs,onion,fresh coriander,pickled jalapenos & mix well.

-Add boiled egg,sprinkle fresh coriander,paprika powder & serve!

Prepare Dahi walay Aloo:

-In a pot,add cooking oil,cumin seeds,curry leaves & mix well.

-Add onion & sauté until translucent.

-Add ginger garlic paste,mix well & fry until onions are light golden.

-Add turmeric powder,salt,coriander powder,red chilli powder,cumin powder,garam masala powder, mix well & cook for 1-2 minutes.

-Add water & mix well.

-Add yogurt,mix well & bring it to boil.

-Crush boiled potatoes with the help of hand,add in pot & mix well,cover & cook on low flame for 8-10 minutes.

-Garnish with fresh coriander & serve!

Prepare Cajun Potatoes:

-In a bottle,add garlic powder,red chilli powder,salt,onion powder,black pepper powder,paprika powder,mixed herbs & shake well.Cajun seasoning is ready!

-In a bowl,add mayonnaise,cajun seasoning,milk,whisk well & set aside.

-Smash/press boiled potatoes with the help of a flat bottom pan.

-In a bowl,add all-purpose flour,red chilli crushed,mixed herbs,black pepper crushed,salt & gradually add water & whisk well.

-In a frying pan,heat cooking oil,dip smashed potatoes in prepared batter & shallow fry from both sides until golden brown.

-Drizzle prepared sauce,sprinkle onion,fresh coriander,red chilli crushed & serve!

Prepare Egg Potato Sandwich:

-In a bowl,add grated potatoes & eggs,mayonnaise,red chilli crushed,garlic powder,black pepper powder,salt,dill,fresh coriander,lemon juice,mix well & transfer to a piping bag & set aside.

-On a bread slice,apply butter on both sides,toast from both sides.

-On toasted bread slice,add iceberg,cheese slices & prepared mixture.

-Garnish with cherry tomato,fresh coriander & serve (makes 4)!

Prepare Crispy Potato Pancakes:

-In a bowl,add grated potatoes,water,mix well to remove starch & squeeze out completely to remove excess water.

-In a bowl,add grated potatoes,onion,black pepper powder,garlic powder,salt,all-purpose flour,egg & mix well.

-In a frying pan,add cooking oil,½ Cup of potato mixture,spread evenly,cover & cook on low flame from both sides until golden brown (makes 6-7).

-Serve with sour cream!
