1: Caramel Bread Pudding:
Ingredients:
-Sugar 4 tbs
-Makhan (Butter) ½ tbs
-Leftover bread slices 2 large
-Anday (Eggs) 2
-Condensed milk ¼ Cup
-Sugar 2 tbs
-Vanilla essence ½ tsp
-Doodh (Milk) 1 Cup
-Strawberry
Directions:
-In a frying pan,add sugar & cook on very low flame until sugar caramelizes & turns brown.
-Add butter & mix well.
-Pour the caramel at the bottom of small ceramic bowls & let it rest for 5 minutes.
-In a blender jug,add bread slices,eggs,condensed milk,sugar,vanilla essence,milk & blend well.
-Pour the blended mixture in ceramic bowl & cover with aluminum foil.
-In boiling water,place grill rack or steam rack & place pudding bowls,cover & steam cook on low flame for 35-40 minutes.
-Insert a wooden stick to check whether it is done.
-Carefully remove the side of pudding with the help of knife & flip it on a serving plate.
-Garnish with strawberry & serve chilled (makes 3 servings).
2: Bread & Butter Pudding:
Ingredients:
-Leftover bread slices 8 large
-Makhan (Butter) soft
-Akhrot (Walnut) chopped as required
-Badam (Almonds) chopped as required
-Kishmish (Raisins) as required
-Jaifil (Nutmeg) 1 pinch
-Cream 250ml
-Anday ki zardi (Egg yolks) 4 large
-Bareek cheeni (Caster sugar) 5 tbs
-Vanilla essence 1 tsp
-Hot water
-Bareek cheeni (Caster sugar)
Directions:
-Trim bread edges with the help of knife.
-Apply butter on one side of bread slices & cut into triangles.
-In baking dish,arrange bread triangles (butter side up).
-Sprinkle walnuts,almonds,raisins,nutmeg & set aside.
-In a saucepan,add cream & heat it on low flame until it comes to simmer & turn off the flame.
-In a bowl,add egg yolks,caster sugar & whisk until it changes color (2-3 minutes).
-Tamper the egg mixture by gradually adding hot cream in it & whisk continuously.
-Now pour all the mixture in remaining hot cream,turn on the flame & whisk well.
-Add vanilla essence & mix well.
-Pour warm pudding over bread & let it soak for 10 minutes.
-Place the baking dish in a large water bath fill with hot water.
-Bake in preheated oven at 170C for 20-25 minutes (on both grills).
-Sprinkel caster sugar & melt it with blow torch.
-Serve chilled!

-Baking dish ko large water bath mein rakh dein aur garam pani dal dein.
-Preheated oven mein 170C per 20-25 minutes kliya bake ker lein (on both grills).
